DO NOT have this place process your beef. They DO NOT know what they are doing. I gave this place a try when they first opened and what a mistake. Completely hacked my beef order. Fast forward to recently. I didn't have a date set at my go to Butcher since I was A.I. my cow and trying to get her pregnant but she ended up open so I called Sean to give him a second chance and see if they made improvements. He assured me they had. I got my order and immediately regretted my decision to try him out again after I could have used another local place as they were willing to accommodate me. Going into this I knew this cow was well marbled and fully finished. Live weight was approx. 1400lbs. Hanging weight was 967# at JC meats. She was a large full frame cow. I had them cut my brisket into 2 points and 2 flats. I ended up with 4 small pieces of brisket approx. 3lbs each that fit into the freezer door. To put this into perspective my usual briskets from a approx. +700# hanging weight are 8-10lbs. each x 4. This cow had a huge brisket, where did it go? I gave him instructions for 1.5" steak cuts. Multiple T-bone cuts were 2" on one end and tapered down to ¼" WTF! Try cooking those steaks. Only ended up with 17 T-bones. Several Top Sirloin steak packs were the size of large roasts. Short ribs packs sizing was all over the map along with several other cuts. Our roasts order was 3-4lb a pack. We got roasts from 3-6lb and all kinds of shapes and sizes. Tri-tips were small. Ground beef, 4 burgers in the last week and only one without gristle. None of my ground beef has ever had gristle from my go to butcher. There was absolutely no consistency with the processing. If you ever had a professional craftsman butcher do your processing, you'd know what I'm talking about. I slaughter approx. 8-12 steers a year. Take your beef to Lemoore Food locker and you'll see. They do it right, every time and are quite a bit less expensive. Like I told Sean, I don't mind paying you top dollar, but I expect the job done right. For the price JC meats charges you may as well take your order to any several other local places and have it done much better. I've spoken with Sean regarding this, sent him pictures, and he agreed. Now he is not getting back to me like he said he would. I've never had any issues from processing from any place but JC meats. I do have my preference and am particular on how it is done though. If you're okay with just having your beef hacked up to eat, then you'll be okay with this place but they should charge accordingly. There's no way I can do business with this place again. Nor can I recommend this place. With the time, effort and money that is spent on making sure my beef cattle are prime and ready for the freezer just for my order to be hacked is something I cannot afford, and neither can anyone else. Take your prized beef to well established craftsman.

Great , simple sandwich. Got some jerky to go as well, and it was incredible. Hidden gem in the valley.

Harris Ranch Country Store - Strawberry Cream Horn

When I think of Harris Ranch, I think steaks. That's it. Never would I have thought their bakery…read morepumps out some delicious pastries and desserts. The bakery is part of the country store, which sells such random housewares and souvenir-type stuff. They have a chocolate truffle case on one side and the other side, the pastries and desserts. The pastries looked delicious and I got a few to try. They also have bags of day-old cookies for a good price. Eclair 4/5* I'm not a huge fan of eclairs with the soft fudge on top instead of the hardened chocolate. Taste wise though, it was a good eclair. The cream isn't overly sweet and the eclair itself was a light dough. Napoleon 5/5* If there's something Harris bakery does right, it's flaky pastries. Surprisingly, this Napoleon stayed crispy the entire drive home and survive even in the refrigerator the next day. Many others I've had usually get soggy, but these layers of puff pastry stayed crisp to the end of every last bite. The cream was fluffy and not too sweet, and paired perfectly with the ripe strawberries. Banana Cream Pie 3/5* I love anything banana and just had to get it when my eyes landed on the perfect swirl of whip cream covered in chunks of buttery crumbles, atop a neat little mini pie. However, the pie itself was too mushy. The crust was soggy, with the smoothness of the banana cream, soft banana slices, and rich whip cream, everything combined was too much mush. It was also too sweet. I did enjoy the crumble on top though. That was the only saving texture. Strawberry Cream Horn 5/5* Wow these were so unexpectedly delicious! The horn is super flaky and delicate, filled from end to end with a light strawberry cream. On top, bits of dehydrated strawberries were not only beautiful but added a nice tartness and texture, contrasting with the silky cream. This was a great upgrade on your classic cream horn. Chocolate Chip Cookies with Walnuts 3/5* Nothing special. They tasted better the longer they sat out because they were crisper. I prefer my cookies to have sea salt for that good balance of salty and sweet, but these cookies were just one noted. Next time, I have my eyes set on this towering cake they had on the counter and of course, take home some of those yummy cream horns.

Highly disappointing to see the Country Store as of late…read more We have been going to Harris Ranch for as long as I can remember and I am 52 years old. It feels like our home away from home as we go back and forth from Northern California and to visit our family in Orange County. We always LOVED seeing the store and its unique gifts that filled the entire place. For some time, there looks to be maybe a quarter of what they used to have. So sad... I used to come and find a lot of my Christmas gifts for people during the holidays. This past Christmas, I went in and the place looked desolate. I was confused and wondered if I missed it all? I don't know if Harris Ranch is not doing well, but it really looks like they're struggling if you look at the empty feel of the store. We just left the shop now on our way back down to Southern California and once again shocked and highly disappointment. It was bad.. I really hope that whatever happening there gets better so that the store can return to the gorgeous shop that it once was.

It's a cool looking store with lots of great stuff. Everything is beautifully displayed. This is a great place for someone who loves the barbecue. On this day we chose some seasoned chicken thighs, and a package of seasoned chili Verde. The people are great. They are very helpful with giving you ideas on how to prepare the different meats. We wandered around and checked out the variety of products they offer. The store is laid out very nicely. On checkout, we mentioned it was our first visit there, and we got two free sausages of our choice. Can't beat that. We cooked the chicken thighs that night. They were tender and delicious. We had the chili verde day yesterday. We slow cooked it in the afternoon, and enjoyed it in the evening. This is a very comfortable place to shop and we're looking at going back. If you haven't checked out Butcher's Block, make sure you do.
