Sugarcane is an option that is compostable and becoming more common. Or since we came for table service, maybe some actual plates that can add to the ambiance. If you order ramen you do get a non-disposable bowl of some sort and the buns were served in a traditional bamboo steamer. But it would have been cooler if the brisket was served on a slab of wood.
