The place was what I expected. A newer version of a typical BBQ place of a bygone era. I ordered from a well meaning counter person who informed me I could pay her but he,motioning towards the back, would cut the meat. I told her what 2 sides I wanted while he cut my 3 meat order. In a few minutes I'd paid, left a tip via the point of sale request ( they've even invaded small town Texas) took my food and sat down. It looked pretty good but didn't feel like it should be almost $30. I took a bit of rib and it was delicious. I thought,things are looking up. I took a bit of sausage. Average but good. Then I pulled the ribs off the top of the brisket revealing an,oh no. I could tell it had been sitting in the warming oven too long. Maybe even yesterday's brisket. A quick taste and pull confirmed this was overcooked and old . So,I did something I never do, took my plate back up to the counter. By the way,I'm a big proponent of not accepting bad food. It's expensive to eat out anywhere and I believe you should only pay for decent food. He looked at it and I ask" would you like to try again on the brisket"? He said, " I'll bring you some more". The counter girl added,I'll bring you a boat out. A few minutes later she arrived with three slices. After examination I determined that's as good as it gets, while reluctantly taking a confirmation bite. As we were eating, Moma T herself came out and introduced herself, and just like everyone else we met she is one of the nicest people I've met.
