Ballyseede Castle Hotel - The castle looks great

Ballyseede Castle is hollowed ground. I was enchanted by the…read morepicturesque landscapes of this property and the architecture of its centuries-old buildings. Starting with the castle itself, the lobby boasts maximalists decor with a wealth of classical artwork. Step outside, and a walking trail beckons through peaceful woodland. I also enjoyed seeing the ponies, dogs and donkeys that are kept on this estate. They were adorable and appeared to be quite well cared for. The dining here is exceptional. I ate dinner and breakfast at the property, and especially appreciated the steamed mussels caught just a few miles away off the coast of Ireland. The interior of both dining rooms is opulent and inviting. With plenty of room for four people, my guestroom in the lodge was also an impeccably pleasant place to spend time. Word to the wise: once you check into this property, you will not want to leave. I'll remember this stay long after my plane takes off for home.

The vibes are great (it is known to be ~haunted~ however sadly did NOT see any ghosts:((( The staff were super friendly, the grounds have irish wolfhounds roaming around, and the food at the restaurant(s) within the castle were very good. I do wish there was more to do/see around the property and the town, but was a great spot to just relax. The dinner selection was GREAT, but the breakfast was just okay/mediocre (some of the buffet items were a little old/ stale it seemed like).

I stayed 2 days and had dinner both nights at the hotel to try different food and give them more than one try on the food. They're of decent size, with large windows (though ours faced the somewhat severe-looking courtyard). Everything seemed clean and pretty well maintained. WARNING: I don't know what cleansers they use, but the tub floors are incredibly slippery. There's a sticker in the tub saying something like "Tub floor is slippery, please use the tub mat provided," but there's no mat. One highlight is the kitchen, which I believe serves both the restaurant and the bar. We had dinner in the restaurant one night and the bar one night, and both were very good. The restaurant's beef and Guinness stew was excellent. In the bar we ordered appetizers (which were easily large enough to make a reasonable meal), and all were very good. Biggest negative was some of the service, especially in the restaurant. The first night was a hot mess. We're with a bus tour and that dinner was our first night meet-and-greet, so we were a party of something like 48 people. Which is admittedly a lot, but they were giving us a very limited fixed-price 3-course menu, and didn't have to deal with payment, so it was hardly extreme. The service that night was egregious. We'd barely sat down before someone was there wanting to take our orders for all three courses. That, BEFORE we even got water, let alone placed drink orders. It took about 25 minutes for someone to take our drink orders. The folks at the table next to us NEVER got to place a drink order! When food started coming out - before our drinks arrived - servers kept trying to bring us the wrong food. We asked if we could split a dessert. Our waiter didn't understand and brought us two desserts. We asked for decaf tea. The server didn't understand and had to go get the woman who seemed to be a manager - who said they DID NOT HAVE ANY decaf tea at all. I feel like there were a few other missteps that night but I don't remember them all. There were issues with breakfast, too - running out of coffee, no tea to be found, etc - and the porters didn't pick up luggage from several rooms the morning of checkout. It's a shame that such a nicely designed space lacks sufficient suitable personnel!
