The bbq was cooked well overall and the rest was just overkill but you'll definitely get full. The average pricing was around $20+ to start so be prepared to pay for the food. They also have koolaid, it's extremely sugary if you're not big on that type of taste. Our society has long accepted that I am nothing short of Barbecue Jesus with standards higher than Mt. Everest. When I drive past the likes of Dickey's, their staff tremble at my mere presence within a few hundreds yard of their establishment. I have shut down subpar BBQ joints with just a glance. I have ruled DFW BBQ reviews with an iron fist that shows no mercy to any heathen who dares to dishonor the culinary masterpiece that is Texas BBQ. Nonetheless, I decided to take a few of my friends (very important dignitaries, Victoria's Secret super models and others who can't get enough of me) to Brisket City...and found this place to be an ABSOLUTE GEM. Their brisket is a solid 11/10... cooked perfectly, moist, proper smoke ring, the right bark and immaculate flavor--a rarity around here. Finding such BBQ in DFW let alone Ellis County is rare. I have decreed that this places makes my top two along with Hutchins in Frisco. I shared some gentle recommendations with their staff on considering non apple cider vinegar based sauce as an alternative, albeit inexpensive addition that would appeal to wider palettes but we all know that real men don't put sauce on their meat anyway so no points deducted there but felt it was important for me to advocate for the trans community and others who must have their sauces. This isn't a tiny street taco--it's loaded. You get brisket, salsa negra, avocado crema, and pickled onions. The balance works really well. The salsa brings some acidity to cut through the fat, while the crema smooths everything out. Every bite comes together nicely. As for the brisket itself, the seasoning is solid but not overly aggressive. Personally, I'd like a bit more bark--it was a little thin for my taste. That said, the smoke ring is very prominent, and you can taste that deeper smoke flavor. Texture-wise, it was very tender--easily cut with a plastic fork. I did catch it later in the afternoon, and the lean slices were just a bit on the dry side for me. Overall, the vibe here is awesome and the tacos are legit.
