Do you ever feel... like a plastic bag... okay kidding. Do you ever feel like you couldn't live without the meaty goodness of a good, juicy burger? So I found myself here for lunch one day, and thank the heavens my friend was wise enough to yell at us to get here quick enough - before the office crowd descended upon the store's FOUR (yes, FOUR tables). Huxtaburger has just opened up along Smith St (literally today). From the people who run Huxtable across the road, Huxtaburger is still in a state of renovation, but they're open for business and selling burgers and beer. I went for the default Huxtaburger for $8. While smaller than a standard pub burger, it was tasty and delicious, with a near perfect balance of ingredients and flavours. The bun was crispy and glazed on the outside, soft and fluffy in the middle. The cheese was melted lovingly over a moist, tasty patty. The three condiments (mayo, mustard, ketchup) formed an equilateral triangle of balanced taste. Pickles and salad were just the right amounts. Huxtaburgers are about doing the simple things as well as they can be done. I get the impression that this is going to be a great place to hang out and and chow down a few burgers over a fair few beers. All tables are currently located outside due to the ongoing renovations inside, so get takeaway if they're full and sit at a nearby tram stop. Bring cash, they don't have EFTPOS yet. read more

I'm bred in Sydney so when i hear that i roll my eyes lol... took way to long to travel south of the border to try out this joint. Finally made it hear though with the excuse of volunteering for a Scandi xmas market on the weekend in Toorak :) Got the OG HuxtaBurger with tater tots & a slight spiced mayo & last but not least there own Huxta Lager lol that's what I'm talkin bout :)!!   Tater tots and sauce were tasty and the beer went down well and last but not least The HuxtaBurger was of the hook tasty!!! Everything worked to tasty perfection between 2 soft buns :D, Could go for another 2 easy and would happily go there but i got a few more places to hit up :). This review will be controversial as I know many a people who swear by Huxtaburger. I on the other hand think it's completely overhyped. The burger is ok not horrible but not memorable enough that I'm ever aching for one. Maybe this is a decent burger for Melbourne but on any global measurement it's lacking...Shake Shack, In & Out, or even London's Burger and Lobster it is not. The service was also hipster indifferent/rude. They did not serve customers in the order they arrived and on a not so busy day it took nearly 30 min for my burger as the staff forgot that we ordered and paid. I can be pretty full from dinner elsewhere and if we drive/tram past I'll desperately try to convince myself I can still fit a burger in. Only downside is spilling out of a cool Smith St bar only to see the lights flicker off - why, oh why can't they be 24 hrs?! As a massive In-N-Out fan (if I'm honest with myself I've probably stopped over in San Fran so many times just to make sure I get a few burgers whenever I'm stateside) Huxtaburger seems to have a similar ethos of keeping things simple, streamlined, fresh, and delicious. It's just so damn good. At first I was convinced it was the brioche bun - not too bready and soft, but light and fluffy on the outside, crisp and crunchy on the inside. Then I thought it was the beef. Meat that actually tastes like meat - slightly gamey, moist and tender with a full flavour that comes out even when it's not cooked medium rare. Then I thought it was the perfect blend of traditional condiments. Mayo, American mustard and tomato sauce that splotches out of your burger in a perfect Jackson Pollock (that you finger-paint with when your burger is long gone). It's at least a 4-napkin burger, and that's something special right there. It could also be the classic burger joint vibe of the venue, the subtle entrance to Bill's Bar next door, or simply the enjoyment of sitting outside watching the Collingwood masses pound by on their way to a venue much cooler than the one you're at... but it'll be far less delicious my friends, far less delicious. Meet my good mate Theo - he's the bloke you don't want taking your daughter out; a testosterone filled beast, who gets his GTL on. Espousing it as some great paragon of the new wave cuisine world. It becomes immediately apparent that Huxta is a permanent tour de force, and beyond exceedingly popular; stratospheric in fact. it's never endingly incredibly busy. I managed to secure a miracle of miracles!! A free seat with in the restaurant: something that is next to impossible. Bonus points for these guys for their "No Cash" policy. Absolutely brilliant. It's absolutely choc a block here and it doesn't end -The crew here works exceedingly hard, kudos to them. It's simply grand that one can have a beer, and a good one at that along with their burger- something that a burger of paramount quality is perfect for. Beer in cans while you eat; pure brilliance. The classic coca cola is available too. It's time for the burgers. Burger? I become distracted by the saucy hot juicy deliciousness of the burger. The Theo come with excellent crispy cheese and bacon awesomeness. As Donald Y so rightly point out; it's very bromantic! Hundreds of combinations must be pumped out before it even hits 2pm. It's an intensive factory line of burger assembly. Hats off for those super hard workers. Do the right thing and tip generously; they work tirelessly. It may be unfair for me to judge a burger place on the merits of its veggie burger...but, I do think if you're a restaurant in Fitzroy, you should have a solid veggie option on your menu. The burger was really just a slab of tofu which had been fried. There was some mayo-ey substance which was good, but I found the tofu itself very bland and it gave the burger a really soggy, wet taste and feel. Blegh! Disappointing, since I've heard a lot about this place. If you're a meat eater, it's probably a fine place, but if you're a vego there are much better places to go for a quick bite. I think that the burgers here are good, but so far I'm not like Wow. For the price point they are excellent. 8-11 dollars/burger is incredibly fair with what you are getting but a couple of points which do HAVE to detract from a glistening review. 1. The place is so damn small. To have a 3foot by 2foot grill is just not good enough, when there is so many people there for a burger. I understand the art of making the crowd wait for it (it isn't fast food after all), but 45 to an hour to order and wait for a takeaway burger (on a wednesday evening) is a bit too long. Even if its a great burger. I agree that it is assembly line efficiency, but maybe its time to expand the grill to a more appropriate size. 2. I have sampled two burgers from there so far. The "Denise" (which was an amazing burger, and with the sriracha mayo, and jalapenos was amazingly balanced and had all the flavours there with not exceeding spice just for the sake of being spicy), and the "Theo" (which I was quite unimpressed with) - the barbeque sauce used is extremely tangy, and I found that it really detracted from the other flavours that were obviously there and could have carried the burger a bit more. 2 patties, bacon, salad, mayo, mustard, and all I could honestly taste was the texture of the meat with the tanginess of the sauce. Don't know if this is an isolated experience with maybe too much sauce on the burger, but next time I would get a theo with the sriracha mayo instead of BBQ sauce (I think that would be bliss) All in all I think I am a fan of Huxtaburger, but with all the great publicitiy it is getting, its at danger of becoming longer and longer waits, and I honestly think that a little extra manpower (and grill power) would go a hell of a long way. Caveat: We went on the second day Huxtaburger had been open. First and foremost: Damn. Good. Burgers. Juicy patties, good quality toppings, lovely buns, which we strongly suspect are brioche, condiments of choice. They're not the biggest burgers you've ever seen, but they are really, really tasty, and - impressively - not over-greasy. And price? Very reasonable at $8 - $11 for a good quality burger. The chips showed promise. That might be a strange description, but whilst the ones we had were lukewarm (at best) and over-salted, they weren't oily, and they had generally good texture and flavour. We let the staff know, and they appreciated the feedback - again, it was just their second day. A range of drinks, both alcohol and non, rounds out the menu. A few tables outside, a bench inside, or take-away are your dining options, with friendly staff and the buzz of Smith St. around you. We'll be back. read more

Good burger and chips!! So I haven't tried many others, but who cares. This is as good as I can remember. My choice was the spicy lady - Denise, and boy was she good. Let's break that down - I thought the hamburger bun they used was superb. Remember, the first thing you bite into is the bread and not the meat. The bread was like cotton candy, so soft and fluffy and on the sweeter side. Genius to focus on the bread as much as the meat. Next up was the dressing - sriracha mayo- southwest / chipotle variant for the uninitiated. The mixture of mayo and sriracha means the mix is tingly rather than spicy. Now to the meat of the affair, and it was good. Juicy (not so lean?) and tasty. Cheese was cheddar I think. Salads included tomato and lettuce. Pretty standard so far. Wait for it - jalapeños that's what did it for me, it added the right level of spice to the sweet and tingly burger. I thought I even tasted some pickles in the mix. I had such high hopes that some of the love for good burgers would spill over to the vegetarian burger too. Sadly, the uninspired square of tofu on a bun was possibly the most disappointing veggi burger I've eaten (and I've eaten a lot.) However, my U.S. dining companions rated their meaty burgers as the best they've had in Australia and easily within their top 5 world wide. With only 5 burgers on the menu, including the veggie, I thought that a little more care would have gone into the vegetarian option. Walking up and down the street we couldn't find anything suitable for a quick and easy bite until we stumbled upon Huxtaburger before we had to attend an event. Not realising where we were until we ordered "The Huxtaburger", we were very excited to give it a go. Though the venue is small, the price of the food was worthwhile! We shared a Huxtaburger and large fries between the two of us and all I could think of after finishing my half was when I could try all the other burgers! I am new to this review business. But this may be the easiest review to do. I am a small fan of Huxtaburger, and I thought the best way to review it would be to paint a picture of the burgers you will receive (you may be able to tell eventually I have been there a few times). You start by making a choice from four or five burgers. My personal favourite is the Theo (your stock-standard double beef and bacon) - gotta keep it simple. After ordering, two fresh beef patties and some bacon are slapped onto their grill, with a ripper chilli/cayenne seasoning sprinkled on top. With that is the sweet brioche buns, which are nice and crispy on the inside, and soft and warm on the outside. (Now this is the part worth explaining. I find with most people this is the biggest bone of contention. They are different to most burger buns, being that they are very sweet! It got me the first time, but once you are resigned to the fact they are a little different, hopefully they are much easier to enjoy!) They are put together very simply. Add the beef and bacon with small slithers of pickles, a single lettuce leaf and tomato slice, your quintessential American mustard and ketchup, and you have a very simple, affordable ($12.50 for the Theo, the standard Huxtabuger is $9!), tasty and filling burger. There ain't much space at the Brunswick store, but turnover is pretty quick so you can generally always get a seat to sit down, or as a personal favourite grab one on the way to the MCG for a good pre-footy warm-up! read more

Seriously. Nice. Buns. That's the first thing that comes to mind when someone says 'Huxtaburger' and lately people have been saying Huxtaburger a lot. The hype is totally warranted. Huxtaburger opened just before Christmas last year and has been living by the successful slogan "hot beef, cold beer" ever since. This American-style burger haven is run by the people behind the fancier Huxtable across the road. Head chef Daniel Wilson is sticking to the Huxtable theme, with each of the four burgers on the menu borrowing its name from a Cosby Show family member. The main star is the Huxtaburger, complete with Moondarra Wagyu beef pattie, American mustard, mayo, tomato sauce, cheese, lettuce and pickles on a glazed sesame seed bun ($8). Then there's Bill's Burger, which is the same as above plus some Aussie additions: bacon, egg, pineapple and beetroot ($10). For the kids, there's the Rudy Burger, a slider with a pattie, tomato sauce, mayo, lettuce and tomato ($5). For those who can handle the Theo Burger, you'll be chowing down a Huxtaburger with an extra pattie, twice the cheese, bacon and a traditional BBQ sauce ($11). Literally mouth-watering. I devoured a Denise Burger, and I don't think I'll ever try an alternative. Named after "the hot one" on The Cosby Show, it's the Huxtaburger base but with slightly more zing, thanks to a generous sprinkling of sliced jalapeño peppers and sriracha mayo ($9). But I still can't get over those buns. They come from a top secret Asian bakery somewhere, which I imagine looks like the Willy Wonka factory but for baked goods. They're slightly toasted, pillow-soft inside and more similar to a brioche bun than a burger bun. Their lightness balances the juicy pattie, which is cooked so it retains a touch of pink. Excuse me while I wipe up the saliva that seems to have escaped my mouth. Crinkle cut chips are available in small or large, as are chipotle fries upon request. We requested. The crunchy golden chips appeared with dark specks of chipotle peppered throughout. Chipotle is a hot smoked chilli pepper often found in Mexican food. It was barely spicy but it added a punchy flavour. At Huxtable you can add bacon, egg and pineapple to your burger for only $1. If you're not a meat eater, there is a rotating veggie salad ($10)... as in one that changes regularly, not one that miraculously spins when served. When we visited there was a refreshing Asian slaw of wombok, watercress, mint, radish and mung beans on offer. Another example was the cauliflower, quinoa, pomegranate, mint, red onion and pinenut salad available the previous week. You can also wash down your burger with a bottle of Peroni, a Kelly Brothers Cider or a glass of wine (hell, why not a bottle?) from Medhurst Estate. There's also a selection of soft drink available, if you're into that sort of thing. On the topic of drinks, the rumours that a speakeasy wine bar called 'Bill's Bar' is opening next door appear to be on track; the space to the right of Huxtaburger is covered in printouts of Bill Crosby's face with a speech bubble hinting "coming soon..." Huxtaburger serve the kind of burgers you crave. They taste good, they look good, they're cheap and they leave just enough juice on your plate to mop up with your chips. As we stood up to leave, I couldn't help but overhear the couple next to us. "I feel sick," she said. "Oh, that's no good," he said. ****This review was written by a visiting American** I start with that caveat because I am assuming my burger palate is somewhat "different" than the average Australian, so take that into account when reading my review. I'll give the props for vibe, aesthetics, and cool/friendly hipster Aussie staff. Furthermore I also enjoyed the "American" IPA bottle I had with my burger. Sadly, it is the eponymous burger where it all fell apart here. Yes, it looked pretty much like an acceptable facsimile as a somewhat elevated Burger in the American Fast Food mold; Sturdy seeded bun, correct proportion of tomato lettuce and ketchup (oh yeah they call it tomato sauce over here, so no you don't have to fear receiving spaghetti sauce on top of your burger, when you don't double check). Unfortunaly, when it comes to the beef, arguably the most important aspect of the sandwich, things went very very wrong. I was basically transported back to the horrors of my middle school cafeteria when biting into the somewhat slimy, grayish mushy meat, which we all know is horrible place to be transported back to. I'm not going to go so far as to say that its not possible to get decent burger in this country, but I will diplomatically leave it that this locally lauded and growing establishment is not helping the case at this time. read more

I love a good burger and was glad to hear of this new burger joint opening on Smith Street. I normally don't like too many sauces and other adornments on my burgers, and the basic model here - the eponymous Huxtaburger - has mayo, mustard and pickles which I normally avoid. I thought of asking for them to be omitted, but quite unusually just ordered it as is. I'm glad I did - it all just worked! The sauces and pickles were mild but worked together and the burger tasted great. I also ordered a Rudy (mini kids' burger) for my fussy 4-year-old and he loved it! Really reasonable prices ($8 - $11) - you can get bigger and/or better burgers elsewhere but I think Huxtaburger have really hit a magic sweet spot between quality, price and most certainly taste. read more

I only will ever eat the Denise, that is not because the other are not as good, its because the Sriracha Mayo i can not go past. packed full of heat from the Jalapenos and the crunchy pickles on the bottom paired with Chipotle chips makes for an amazing hangover feed or a late afternoon feed with a couple of cheeky beers to start the evening. We were on a night out drinking piss in Fitzroy and ended up near Huxtaburger on Smith Street. I was quite hungry by then and, being in this neck of the woods, I had to get me a burger from there. I'd heard so much about it (how hasn't?) and I'm a real sucker for burgers so this was my chance! The place was so busy, with some eating in and others getting takeaways. I went for a straight up Huxtaburger with fries. I always like to get the 'original' / 'basic' (or whatever you want to call it..) burger when I try a joint for the first time. I won't try any of the upgrades until I've had the 'original' one. I know I know.. I'm very particular when it comes to burgers. I was not happy with a wait of 25 mins as any hungry man who's been drinking quite a bit would be. Anyway, 25 mins later, I finally get my meal and, well, it's mixed feelings really. The burger is not bad.. quite good actually - good meat-to-bun ratio, juicy patty, nice flavours, the bitterness of the pickles works well with the sweetness of the tomato and the mayo as well. However, the big let down for me is the size of the burger. They're meant to be pretty good and everyone loves them but I'd have liked my burger to be a bit bigger to be honest. That said, I will definitely go back though. The combination of being very hungry and the considerable wait time might have contributed to my alcohol-fuelled frustration so we'll see how it goes next time.. read more

The only thing better than buying a burger from Huxtaburger is telling your friends about the burgers when they have never been. You start describing the Denise or the namesake Huxtaburger: beef pattie, mustard, mayo, tomato sauce, tomato, cheese, lettuce, pickles. Properly American style, butter soaked buns with big pieces of meat. HOT TIP: When eating in, ask for your burger takeaway but on a plate. Burger places have been coming and going in Melbourne over the last few years, but I still really like Huxtaburger's. Why? Well: 1. The pattie-to-bun ratio is really very good - no unnecessarily oversized patties here, just careful consideration of the amount of meat that can actually fit in the bun. A great start. 2. All ingredients are of a pretty high quality; the bun contributes as much to the burger as does the meat, so you don't have to play favourites with bits of your burger. That's a nice change. 3. Condiment distribution is generous, but not overwhelming. This is an oft-overlooked burger assessment criterion, but it really shouldn't be. 4. Milkshakes are made with delicious things like vanilla pods and salted caramel. And they come in the regulation milkshake receptacle - large metal cup, frosted on the outside. The only way to go. The Smith St location has a good vibe with its outdoor seating, although sometimes food takes too long to arrive - if you're popping by on a warm night between 6 and 9, prepare for a wait. read more

Nice burgers, excellent buns and creative toppings! It took a little while to get dinner, but they were pretty slammed and we didn't mind waiting with our adult beverages and nice bench to hang right out front. I had the Bills, sans beetroot and egg, and was very pleased. My partner had the Theo and was a little less impressed, feeling it was overly salty and not enough condiments to balance out the meat. The hot chips were nice, would love if they're a bit more crisp next time. We will most certainly be back! The only reason it doesn't get 4 stars is the price. It's a tad spendy for burgers. There have been quite a few burger joints popping up around Melbourne and many restaurants trying their hand at a stock standard but delicious burger. Despite some good attempts at other establishments I keep coming back to Huxtabuger. The burger has a good piece of meat, the size is easy to manage with even one hand and the accoutrements have a great balance between sweet and tangy. Can't be beaten. read more

These burgers taste like home to me. While they still don't compare to Shake Shack in any way shape or form (if one were to open here I would cry), they're a step in the right direction at least. The fries are nothing to write home about (the chipotle fries are especially terrible) but as far as the burger goes, I appreciate the sweet brioche bun, the good bun-to-patty ratio (what is with the bun-heavy burgers in this city? Get it together, Melbourne!) and I like that they add pickles. It's pricey for what it is, but whenever I'm feeling homesick, I make a bee line for Huxtaburger. Pro-tip: it takes about 10-20 minutes to make most orders so call ahead if you're doing takeaway so you don't have to wait in the cramped space. read more

As a vegetarian I tried the Sondra - the tofu burger with sesame mayo. While it did not look appetizing it was very good & I'd go back again for it. I also had a side the crinkle chipotle chips. There a bit too much chipotle spice for the size of the chips, however the sauce they gave you to dip it in it helped to take away some of the heat. The Whale Ale was a A+! read more

A year and a half ago, I would've given HB five-stars. However, each time I visit, the quality of the beef gets worse and worse. You know those hard bits in a burger? Not to gross y'all out or anything, but I swear to all that is holy, each time I've visited HB in the past eight months or so, those hard bits have become more and more abundant. Last time, I only ate half of my burger cos I got so skeezed out. Even though they've added yummy milkshakes to their menu somewhat recently, it's not enough for me to want to eat here anymore. I just don't like playing Russian Roulette with my burgers, risking breaking a tooth on one of those hard bits, even though I love my dentist (see my review for Smile Solutions!) I've thought about their veg option, but last time I was here, I saw a woman across the way eating one. It was a thick slice of grilled tofu, accompanied by all the other burger fixins. Seriously, Huxtaburger? It's super easy to make a delicious veggie patty using various mashed up beans and spices. A slice of tofu is just so lazy. A burger without the meat (and no tofu substitute) would be more appropriate. read more

Firstly the sesame topped roll is glistening! It looks picture perfect and is lightly toasted and gorgeous! The wagyu beef patty is fresh, not too big, not too small just right! Grilled perfectly so just still slightly pink and then placed lovingly into the perfect roll along with mustard, mayo, tomato sauce, tomato, cheese, lettuce, pickles.
