    [[HIGHLIGHT]]Friendly little brew pub and coffee shop.[[ENDHIGHLIGHT]] Good variety of brews from porters , lagers, and sours. The nitro pub ale was excellently smooth.

    Beer was great! Service was eh. Disappointed they do not offer taster flights. 8 beers on tap and we really wanted to try them all. The guy behind the bar really didn't seem to care if we ordered or left. Funky, free-spirit hippie kinda vibe. Decent pizza next door.

    Such a fun, chill place. Super friendly service, small town feel where everyone seems to know each other. Grabbed a veggie breakfast burrito from the coffee shop inside and then tried the Everything's Round and fantastic Cloudy with a chance of rainbows beers. Don't pass this place up on your way to Nederland!

    My favorite go-to place in the Rollinsvillle/Nederland area. Friendly staff, beautiful space and delicious beer. Zack and Melissa are the most amazing humans alive! The spooktacular decorations for Halloween are on point!

To note, I've only ever been here for lunch, never dinner until last night. We drove over from Boulder to have kombucha and awesome BBQ, like we have in the past. When we arrived for dinner, there was a DJ and trivia going on inside, so we decided to sit outside on the front porch and it was beautiful out! Perfect weather. Our first disappointment started with the service. One thing I enjoy about going out is being waited on and customer service but the hostess said I had to scan the QR code and order my own food and pay the bill from my phone, the server just brings out the items as they're ordered. I've enjoyed interacting with staff and Kyle in the past and I'm very social, so I was not happy about missing out on the customer service experience. We ordered the kombucha, which hasn't changed and was delicious as always. I ordered a pulled pork sandwich with a side of cole slaw and cornbread and my husband ordered the Smoked Beef Dip with a side of cole slaw. Both of our sandwiches were lacking meat, it was mostly bread. And my sandwich was very dry; I added sauce but the sauce outside on our table was very soupy (not sure if that's normal or if the consistency changed from the temperature outside). After tax and tip for 2 kombuchas and 2 sandwiches, our bill was $67. Overall, I was really disappointed by my dinner experience. Total bummer.

I slept about 4 hours the night before to make it early for sunrise. To say that a few tasty beers were what the doctor ordered would be the understatement of the century! None of this matters, of course, to the good folks at Rocky Cut Brewing Company. This is off the main drag of Estes in an unassuming strip plaza. Humble vibes inside, a simple U-shaped bar top with seating all around, a few smaller tables, a community table, and a large patio with mostly picnic table seating. If you're lucky, snag a stool right along the Big Thompson River! Though, I recommend they fix the wooden placeholders for beers, they're leaning on the wrong side of history, we don't want any full glasses of beer reaching an unnecessary demise! Interference IPA * American IPA * 6.7% * 16oz ($7) From their website: "Climbing the Interference Boulder in Rocky Mountain National Park requires strength and power. This Colorado IPA showcases the power of hops with an intense blend forging citrus aromas with a pine forward finish. Featured ingredients: Cascade, El Dorado, Mosaic, Chinook, & Simcoe hops * Recommended adventure: hiking Black Lake, climbing the Twin Owls, skiing upper Hidden Valley." A perfectly apt description. I would summarize this beer just as they did, focusing on hops, citrus, and pine. Absolutely delicious, a memorable IPA in recent memory. I liked it so much I ordered it again and it tasted just as delicious the second time down! They also had a food truck outside, so safe to assume they do this often. The core original beers are good, but not much new is happening at Rock Cut. Why mess with success, I guess? Because it would probably piss off the folks that were trying to change the paradigm when they started, that's why.
