The menu uses local, seasonal ingredients and was perfect and very filling. Wonderful bread, local beer, and local wine. For dinner, it's best to be seated right when they open at 6pm as dishes do sell out as it seems they have a limited amount some of the fresh ingredients. Otherwise, perhaps it's possible to ask them to hold a particular dish for you, especially if you are staying in the hotel. The staff of the hotel were very kind and relaxed. It felt very cozy and homey to stay here with the family atmosphere. Highly recommended! Some background: ​The hotel rooms are decorated in the new Nordic style, which is light, friendly, and simple. The hotel was originally an old merchant's house and was rebuilt as a hotel in 1829. One of Denmark's best-known chefs and gastronomic entrepreneurs, Claus Meyer, took over the hotel in 2006 and his food philosophy permeates the restaurant's menu. Meyer is credited as the founder of the New Nordic Cuisine philosophy. He and chef René Redzepi co-founded Noma. I'd somehow still call it a B&B, but Hotel works too I guess. The room I was in was very cozy, the view on Stege Nor was amazing! Check out my pictures =) The host was very friendly, she recommended great places to visit while on Mon and seemed totally into wanting to give me a great experience staying there. The room was a little pricey, it was DKK 600 for one night and person including breakfast, but okay, I had a great room. Except for the shower, which was in the toilet, so when showering everything gets wet (paper towels, mirror, toilet....). But who cares. Unfortunately the breakfast wasn't very rich. As I am part Swiss, part Danish and travel a lot I can tell that it wasn't prepared with love, unlike other places I had visited. That's why I only give four stars.

But it's a nice place to invite your significant other and spend a night or two. Just be prepared to pay 1000+ kr per person for a nice meal w. Wine in the restaurant and around 1400 kr per night.

And by car Roskilde is like a suburb to Copenhagen within easy commute. The rooms are fresh and nice like in most (but not all) Scandic hotels and the breakfast buffet is generous. Not sure about the vegan options apart from fruit, tea and coffee. But for vegetarians it's a decent selection. Stay away from the cheese though, Danish cheeses are inexplicably nasty and very smelly.
