Yule Organic is based at Penylan Farm in Dingestow, Monmouth, and is for me at least, what living in Wales is all about! They supply, 'freezer packs' of well-hung organic lamb and Aberdeen Angus beef to order, as well as producing the finest lamb rugs from their organic lambs. These are also organically tanned. Golden Lamb Rugs are essentially fleeces that are 'lovingly produced' from organically reared lambs that are biodynamically tanned locally to the highest levels of professionalism. Their website offers a boon of information, featuring all the good reasons to go organic... here's one of them: "On average, organic food contains higher levels of vitamin C and essential minerals such as calcium, magnesium, iron and chromium as well as cancer-fighting antioxidants." And here's another: "Organic food doesn't contain food additives which can cause health problems such as heart disease, osteoporosis, migraines and hyperactivity. Amongst the additives banned by the Soil Association are hydrogenated fat, aspartame (artificial sweetener) and monosodium glutamate." And one more for luck: "Over 400 chemical pesticides are routinely used in conventional farming and residues are often present in non-organic food. The UK government has recently found high levels of pesticide residues in baby food, spinach, dried fruit, bread, apples, celery, and chips."     We came upon Criostal na Rinne by accident - no by serendipity! We had a few hours between a…read morewedding and reception and saw a sign for a crystal shop. Eamonn was in his workshop area on a Saturday afternoon working on custom crystal pieces for an upcoming golf tournament. He stopped what he was working on and took us through the process of cutting crystal and showed us how he started, his past career with Waterford crystal and what it takes to be a master craftsman. You wouldn't guess how busy he is based on the time he took to tell us about his craft. He did this all without the idea that we were there to buy anything. His work is exquisite - as attested to his being selected to make the St. Patrick's Day Cup that was sent to the US White House this year. Many thumbs up - and many thanks to Eamonn!
