We adored our time at Hilo Negro winery. It wasn't crowded on a weekday and we essentially had the place to ourselves. Alturo took incredible care of us. The tasting was lovely. We ended up purchasing a few bottles. The architecture and grounds are stunning as well. Super pleasant experience!

I loved the wine tasting at Hilo Negro. Though short staffed, they were very attentive and had wonderful customer service. As soon as I finished one tester, they were there to pour another before I even had a chance to see the bottom of my glass. Their pours were not small either, which I can really appreciate. They had a lot of seating options - indoors and out. The wines were excellent and the views are so-so since it's close to the road, but I loved the rustic modern design of the place. I took one star away because my boyfriend does not drink wine, and they literally had nothing for him to drink other than a bottle of water from Costco. He would have appreciated a nice sparkling water or juice drink, as I'm sure other non-wine drinkers would also!

One of the best rosè wines in valle. Fresh and crisp and clean. The white is ok and the reds need help.

We came here in the afternoon for some wine tasting. The ones you get to taste are delicious and have their bottles on display throughout the inside. Staff wear masks and masks are required to enter. They also take your temperature before allowing you to enter. They had many guests at the time, but only 2 people working so they were short staffed, making service slow. Regardless, it was a fun experience at a beautiful place.

A group of us, including two close friends from out of town, wanted to have a nice dinner in one of the many great restaurants here. One of our first stops was Viña Emiliana, a beautiful winery with excellent wines. One of the owners, Mili, recommended the restaurant that is attached to the winery, El Tizne. El Tizne is a outside restaurant with a great kitchen set up. It has a daily set menu with several choices from seafood to meat. I was so impressed with their explosive flavors in their Tabla de quesos that I cancelled the dinner reservations and decided to explore their menu. We started with wine tasting enjoying the wines of Viña Emiliana and una Tabla de quesos that had several cheeses from the region sprinkled with beet syrup accompany with homemade pita bread. Then, we had adoba pork "huaraches" that were delicious in taste. We continued with a textured salad that was grilled topped with fresh cheese and with house mole in the bottom of the salad. This is the best salad I have had in my life since it had several different textures and flavors when combined, create a unique taste that was wonderful. Wow! Finally, we tried the New York steak cooked perfect for my liking with a creamy mash potatoes and fresh veggies. The dinner was fantastic and the one thing I was able to take back was their house tizne salsa that is to die for. I mean it, it changes everything. It is black, oily and it adds so much flavor to everything. I am addicted and I am going to have to make a special trip to get more. El Tizne is another gem of the Valle sitting next to one of the wineries in El Valle! By the way, I love that two strong beautiful mujeres are the leaders of Viña Emiliana and El Tizne.

We've been coming to Valle de Guadalupe ("VdG") for about 15 years now, and this is one of our favorite wineries, and wines. Service is excellent. In the past, we had Alex Rubio pouring for us, and on our most recent visit, Julio Cesar took care of us. They're family owned/operated with estate grapes, and they focus on Italian style wines (Sangiovese, Montepulciano, an Italian blend which includes Nebbiolo, Sangiovese & Montepulciano.), as well as the classics: Tempranillo, Malbec, Merlot & Cabernet Sauvignon. We shared both tastings, so we could try everything. They also have a Tinto de Verano/Sangria ($120 Pesos/$7 USD) for those non-wine people, like my mother-in-law. There's a restaurant onsite which serves everything from snacks, charcuterie boards, entrées, and desserts. Chef Alex Rubio uses seasonal ingredients from their garden and the rest of the region to make dishes that pair with their wines. In the past, we've tried the Tres Ceviche Sampler (shrimp, octopus, and fish) which was delicious and paired nicely with their white wines. It was served with complimentary bread and olive tapenade. In my opinion, Bodegas F. Rubio has some of the best wines and is a must experience winery when visiting VdG. I highly recommend.

Each label on the wine bottles had a story behind it. They also offer food but we didn't get anything because we ate earlier. The steak that the table next to us ordered looked and smelled good. We are definitely coming hungry next time we come here. I would definitely go back to this winery and recommend it to anyone looking for something that's more low key with great wines.

The wines were fantastic, but what really made the experience stand out was the service. Everyone we interacted with was warm, welcoming, and genuinely excited to share their wines and story with us. Our sommelier was especially wonderful and made the tasting feel personal and relaxed rather than rushed or scripted. One of our favorite parts of the visit was the chocolate and wine pairing that my husband and I did together. Every pairing was thoughtfully put together, and it was so much fun discovering how the flavors changed and complemented each other with every sip and bite. The best surprise of the day? Finding out our sommelier was from the 805! As fellow Central Coast locals, it made the experience feel even more special and gave us an instant connection that we definitely weren't expecting to find in the middle of wine country in Baja.

From the moment you arrive, it's clear that this is more than a winery--it's a luxury destination designed for those who appreciate exceptional wine, world-class hospitality, and an unforgettable experience. We chose the chocolate and wine pairing, and it was, without exaggeration, 100/10. Every pairing was thoughtfully curated, allowing each wine and handcrafted chocolate to complement one another beautifully. It was easily the best chocolate and wine pairing we've experienced in Valle de Guadalupe. What truly elevated our visit was our wine host. We sampled more than a dozen wines, and throughout the tasting he generously poured several complimentary selections that weren't even included in our package because he genuinely wanted us to experience the breadth of El Cielo's collection. His passion for winemaking, extensive knowledge, and warm personality transformed what could have been a standard tasting into an educational and memorable journey through their portfolio. The property itself is absolutely breathtaking. Immaculately maintained with stunning architecture and panoramic vineyard views, every detail reflects elegance and refinement. El Cielo also features a beautiful resort on-site, making it the perfect destination for anyone wanting to fully immerse themselves in wine country without ever leaving the estate. One of the most unique touches is the private helicopter landing pad, allowing guests to arrive in spectacular fashion and adding another layer of exclusivity to the experience. It's easy to understand why this estate has become a favorite retreat for celebrities and travelers seeking luxury, privacy, and impeccable service. Every member of the staff made us feel genuinely welcome, the service was polished without ever feeling pretentious, and the cleanliness of the entire property was impeccable. There are many wonderful wineries in Valle de Guadalupe, but El Cielo has become our absolute favorite. Between the outstanding wines, unforgettable chocolate pairing, luxurious accommodations, exceptional service, and breathtaking setting, this is the winery we will continue returning to every time we visit the valley. It is the kind of place that reminds you wine tasting isn't just about what's in the glass--it's about creating an experience you'll remember long after the last pour.

The rosemary bread served with olive oil was simple but unforgettable, and the guava spread was hands down one of the best accompaniments I've had at a winery. The Spanish chorizo was also outstanding -- flavorful, perfectly prepared, and paired beautifully with the wines we tasted.
