Upon being seated, guests are presented with a simple yet genuinely authentic menu. The flavors remain consistently exceptional, a quality I believe is essential for any restaurant hoping to thrive in Alexandria. Caro's is far from the typical, run-of-the-mill Mexican restaurant where meals are hastily assembled from a hot line and served with an inflated price tag. Instead, each dish reflects care, authenticity, and craftsmanship. Complementing the cuisine, the staff and atmosphere provide an added layer of warmth and charm. The establishment also features a small shop offering imported goods, further enhancing the overall experience. I strive for honesty and objectivity in my reviews, and I rarely award a full five stars. However, Caro's is an exception. This assessment is not based on a handful of visits but on years of consistently outstanding dining experiences. If I were to choose a single word to describe Caro's, it would be authentic. This restaurant exemplifies what true, heartfelt Mexican cuisine should be.

The street tacos --though the burritos and fajitas never disappoint either. What makes Caro's stand out is more than the food--it's the people. The owner and staff always greet me and make every visit feel like home. Well- gotta say- salsa was exceptional- chips were made in house - very crunchy- actually awesome; the guacamole is as good as the salsa The main course - good as the salsa- nothing else needs to be said One of the owners came over to visit and asked what we thought-- I told him I was gonna rate him on the Yelp scale of 1-5- - - He said what grade do we get? A 7 I said- and well deserved Told him next time we are back this way - we look forward to seeing him again Great place- great food and service and where your business is appreciated!! Haven't been inside the restaurant since the original review, though, so can't comment on service experience again. Original Review: I found the overall experience pretty lackluster. Maybe it was what I ordered, but the food was pretty "meh". The portion was also small considering the price and what I've gotten from other mexican locations. The staff was kind of all over the place. Not too attentive. I'll give the benefit of the doubt on that, though, because when a new restaurant opens in our lil' town people flock like it's the second coming of jesus so the place was jumping. I've had better food from other mexican places...that's the main issue.

They serve some awesome margaritas, frozen and on the rocks. They have daily drink specials. My service was ok. Nothing special or to write about. They bring you chips and salsa to your table to snack on, as does most Mexican restaurants. They have Mexican music playing in the background of the lobby I ordered the beef enchiladas and it was ok. Like the service it not anything special. I have had better and I have had worse. The food, however, did arrive to my table very quickly. This restaurant is very attractive from the outside. I would probably explore some other Mexican food restaurants before I ventured back here. It is not a bad restaurant. And if I had to eat there again I would, but there are many better ones out there.

It was my colleague's turn to choose the dinner location and he decided on Mexican food. Now, I am…read morefrom Arizona, which has the best Mexican food, so I wasn't exactly excited about eating this genre in Alexandria, Louisiana. Here goes... I wanted to play it safe so I ordered the carne asada. To my surprise, it wasn't horrible. Had good flavor and was cooked perfectly. It's served on a bed of grilled onions, which was weird but whatever. This dish also came with my choice of corn or flour tortillas. The rice and beans on the side tasted like they came strait from a can though, but who's there for the rice and beans anyway? Pro tip: save yourself a few bucks and just order the steak fajitas in lieu of the carne asada. The fajitas are served almost identically to the carne asada, except your meat is cut for you already. Both plates come served over grilled onions, both come with tortillas and also with rice/beans and toppings. EXACTLY THE SAME! Weird thing is, the carne asada is $2 more? Give Pedro's a shot, it won't be the best Mexican food you've ever had, but it won't be the worst either. One thumb and a high-five for Pedro's. Happy eating, my foodies!

I commend the staff for being really nice and helpful. Everything was still intact and hadn't melted by the time I got back to my hotel room. The ice cream was still firm and the shell was still crispy. Before digging in I had to take some of the whipped cream off of it. A little bit too much sugar was sprinkled on the outside but overall this was really good. I may come back and visit this place again before I leave. I just know to ask them not to put any whipped cream and not as much sugar. The staff was friendly and very helpful.
