We went on the 3 week of them opening. We were lucky to get a reservation since they have become extremely popular since opening. With VERY limited seating, it makes sense why they have turned so many away that don't make reservations. If you can make reservations for dinner, do it! Even with certain items being sold out due to us having 8pm reservations, we were still very pleased with what we ordered. Expect to pay a little more for the freshness of the ingredients and also the ambiance. We are already planning on make another reservation soon if we can! read more

What a disappointment I tried this place for the first time after making a reservation a month in advance. Leading up to our reservation, my whole family was excited because of all the hype we'd seen on social media. Unfortunately, the experience was a huge disappointment. We were a party of eight and weren't seated until about 35 minutes after our reservation time. I understand that delays happen, so we let that go. Once we were seated, we ordered immediately since we already knew what we wanted. Our order included: * 3 Firecracker Rolls * 10 pieces of nigiri * Pork Belly * Crazy Noodles * Ahi Tataki Salad * Pickled Salad * baked California Roll * Spicy Tuna Roll * California Roll * Ginger Chicken * Hot Oil Sashimi About 20 minutes later, only the Pickled Salad came out. Another 20 minutes passed before we received the Spicy Tuna Roll and California Roll. About 15 minutes after that, the Ginger Chicken, Pork Belly, and Fried California Roll arrived. At that point, I started wondering if this was really how service was supposed to work. Food was coming out one or two dishes every 15-20 minutes while we watched the sushi chefs chatting with three guests at the sushi bar and serving them dish after dish without long waits. My three kids had each ordered a Firecracker Roll, and that was all they planned to eat. They had to sit there and watch everyone else at our table receive, eat, and finish their meals before their rolls finally arrived about an hour and a half later. As a parent, that was extremely frustrating. Mind you we never got the ahi takaki salad. I asked our server if this was the normal experience, and she explained that it was because we were a large party and everything was made to order. However, we placed our entire order at the same time. I also pointed out that the three people sitting at the sushi bar were receiving their food quickly and continuously. She then said there were only two sushi chefs. The problem with that explanation was there were only about 11 customers in the entire restaurant at the time. When you're paying around $25 per sushi roll and $28 for entrées, you expect exceptional food and service. Instead, we spent over $350 and still left feeling hungry because the meals came out so slowly and inconsistently. I'm sharing this review so others know what to expect. Based on our experience, this restaurant does not seem equipped to handle larger parties. Unfortunately, the food itself also didn't justify the premium prices. I had such a great experience at Sushi Hideo!!! This new sushi spot in Hilo is truly a hidden gem. The service was amazing from start to finish, and the owner was so friendly and welcoming, which made the whole experience even better. The chef is a one-man show, and it's honestly impressive to watch. You can tell a lot of care and attention goes into every dish. The food was incredibly fresh, high quality, and absolutely delicious. It's understandable that there is a wait because it's one chef for the restaurant. I didn't mind that the lunch menu was limited because of this. Because the options were still amazing. The restaurant itself is beautiful, clean, and has such a nice atmosphere. It almost makes you feel like you're not in Hilo. Everything feels elevated, peaceful, and thoughtfully done. Definitely worth visiting if you're looking for fresh sushi, excellent service, and a great overall dining experience. Hilo needed a spot like this! read more

Hideo sushi was amazing from start to finish, I didn't get my servers names but they were both lovely, attentive, and knowledgeable of the menu. The owner was friendly and working the sushi bar which was clean and welcoming. The ambiance was sophisticated but still casual. The ahi tataki is a must. Will definitely be returning soon. My boyfriend was late because of work but they were very kind about seating me and getting things started without making me feel rushed. Honestly it's the best thing to happen to downtown Hilo as far as sushi, and I'm born and raised here. read more

This incredible new sushi spot is Fantastic in every way! I had the Nigiri offering / chefs choice.... The beautiful platter could not have been better, the fish was So Fresh and so stunningly prepared.... The service was spot on and very attune to my needs, questions and their recommendations were nicely presented. The space is petite and intimate. Hideo Sushi was AMAZING and we are very particular having gone to Japan 8 times and know what amazing sushi is. What was surprising were the portion sizes. Super generous and high quality. They also have entrees! We had sashimi, Hideo roll, assorted nigiri, negihama, crazy noodles and house made pickled veggies. Everything was delicious. The ambiance was also really nice. It's been a while since Hilo has had a new restaurant to try. Hideo Sushi was worth the wait! Every dish was top notch--made with the freshest ingredients, attention to detail, and authenticity. The location they are in looked questionable outside but when you go inside it is a calm and intimate space with just two tables and two bars. Get reservations as many were turned away! My favorites were the dynamite roll, galbi (SO tender!) and sesame ice cream. This is a wonderful restaurant for Hilo and I cannot wait to return. read more

Took way too long. Salmon was too salty . I didn't expect it to be cooked. Small portions.

I just popped in here for lunch and they are still on a somewhat limited menu, but with really quality sushi bowls. Imagine a poke bowl but with sashimi and sushi rice. This place is gonna need to expand really quickly to accommodate all the people that want to get in here. It's clear they are still working out the kinks with reservations and all that stuff- getting their liquor license, etc. but all in all this place is gonna be awesome. If you can get in I suggest you do ASAP. I can't wait to get a dinner reservation where they feature a much more extensive menu. read more

Went to Hideo Sushi with my best friend on May 11th at 4:30. Table was beautifully set, waitress was very attentive, and the atmosphere was warm and calming (though seating is limited). We each ordered the nigiri set and split the miso king salmon, Da Bomb Roll, scallop udon, and Tsukemono Tadao. Everything was delicious. It's BYOB which was a nice bonus. Finally had a chance to check this place out. Great atmosphere and service. The food was delicious. I had the spicy bowl and wifey had the deluxe bowl. These are upscale poke bowls. Served with added extras like finely sliced ginger and onion, tobiko, and pickled vegetables. This was the first time I had ginger to go with my poke bowl and I was surprisingly pleased. The ginger was so fresh and finely sliced that I enjoyed it! The rice was seasoned as it should be with sushi, so I enjoyed that very much! So many places just put your poke over regular rice. And that is why we all buy the poke and make poke bowls at home. But here, it was top notch! The fish was fresh! I loved having a poke bowl that didn't have mayonnaise. Bowls run from $26 (ahi and spicy bowl) to $30 (for a deluxe). Someone might say that the prices are a bit on the pricer side. And I have to be honest, I thought the same thing, but after my meal, both the wifey and I said, "do over!" Just something we say if we will be back. We were disappointed that there were only bowls being offered for lunch, but they just opened and hopefully they will increase their menu options later on. Can't wait to try dinner! Goodness! This is a relatively new restaurant in our little town, and it is very, very good. I will warn you that the entree dishes are humongous! The pork belly in congee with a soft boiled egg and a cool salsa verde added on top was unbelievably good! So tender, the large hunk of pork belly is served with a spoon only. But it was a meal stopper! I thought it would be "sushi sized" to include as a few bites between sushi, but my stomach put the brakes on after that . Luckily I had a few pieces of their excellent nigiri first. The Chef is personable but serious about running the kitchen. Someone in a review said the experience would have been more authentic if there was samisen music instead of the playlist they have, but I was so delighted with the Hawaiian music, I asked who made it.
