Very comfortable and friendly. Good food and great craft beer. So far I like the Weizen best but there're more to try.

The beer alone makes it a 5 star. The food is excellent. We are slowly working our way thru the whole menu.

Tostadas atún

I had the tacos de marlin and they were really yummy with perfect spicy-ness, but I kind of wished they were served warm rather than cold. My friend got the tostadas atún and thought they were gods gift to earth, so she rated a five. Other party members also rated a four or five. We got all the appetizers and most were very good.

Beautiful old building with several dining spaces. Indoors is with AC, bar, and tv. Outdoors beautiful trees, tables, and lighting. Also saw a stage for entertainment. They serve excellent craft beer (Patito Craft Beer) and traditional Yucatecan food. We tried the beer sampler #1, then ordered Hefeweizen and APA (very complex). Our favorite dishes were the octopus tostadas (fantastic) and tacos cochinita. The veal chile relleno was also good. The ceviche was ok, but not great. Service very good. Friendly and attentive. The place is gorgeous, so I'll post photos.

Great meal. The lamb appetizer was very good. For dinner we split the tostadas de pulpo con loganiza and tostadas de marlin ahumado and we were amazed!

No longer Hermana Republica. Now a new restaurant called Holoch. I don't care for it. Service was slow.

It's enchanting at night watching the lighted towers of the old cathedral standing watch over the Merida night sky...sitting at a candle lit table with cool Yucatan breezes blowing. It's a far remove from the hustle and bustle of the narrow, crowded downtown streets and the lively plaza. I ordered a pumpkin seed-based salsa which was prepared table side in a stone vessel. My friend ordered the grilled fish with rice, pickled carrots, onions and sauces. Both were delicious. We also had nice drinks, red wine sangria, and beer. What was perhaps the best feature of the place is the excellent waitstaff who are bilingual, who are helpful with making you feel comfortable, who provide charming conversation and tips, and who are generally well trained in hospitality. Such a far cry from the dour and arrogant wait staff typically found in Washington DC restaurants. This is a good place for a quiet escape from the plaza crowd.
