We had a tour of the…read moremaple syrup room and the brewing area and learned quite a bit about how Critz Farms started and evolved over the years. The owner told us about the Agro-tourism industry that connects people to farms, ranches for the purpose of recreation, education and direct sales. Critz operates all year round with activities and events for all the seasons. Christmas trees, maple syrup, pumpkin picking, apples, kids areas, rides in a wagon and so much more. We had a very good time in the tap room doing a tasting of several of their hard ciders. Everyone we came in contact with was friendly and we even got to meet the beautiful dog Watson. They also have a good selection of precut Christmas trees, and handmade Christmas wreathes in all sizes! The gift store is brimming over with holiday ornaments, decor, boutique items, farm fresh maple syrup, and homemade fudges galore! Busy Saturday afternoon but line moved quickly, fast friendly service. Bought a 27 " wreath and several items for Christmas gifts. Next we stopped in the tasting room and were able to score a couple stools at the end of the bar after just a short wait. We both ordered flights of seasonal ciders that are Critz Farm made. Ciders, Brews, local cheeses and more available for purchase! Season ends December 14th!

Our Tasting Room, located at 70 Main Street, Delhi, showcases not only our spirits but the best wine, beer, cider and spirits from New York State, along with cooking classes and the occasional special dinner." I am writing a review of a cooking class I attended, "The Art of Making Sushi". Jerry Pelligrino wears a lot of hats. He is a farmer, distiller, and chef. After 20+ years in the hospitality industry, Jerry, came up to the Catskills to create Strickland Hollow Farms. The Tasting Room is the storefront where distilled spirits, ciders, beers, and wines exclusively from New York State are offered for sale. Conservas (food preserved in cans) are also sold there but they're not from NY. Attached to the left of the main shop is a room which can be converted to an ad hoc kitchen. That's where the cooking classes are held. Mise en place (putting in place) is a culinary term which means ingredients and tools are prepared and organized before the cooking begins. The success of this sushi making course was dependent on the preparation of the ingredients ahead of time. Fish (salmon, scallops, tuna) was cut into strips, pre-cooked shrimp (deveined with tail on) was available...halved avocados...julienned cucumbers...soy sauce...cutting boards...knives...makisu (rolling mats)...plates...sushi rice...everything was ready. A lot of work went into the preparation to make it easier for the students to learn how to make different types of sushi. Jerry usually focuses on teaching maki and nigiri sushi. This time, he also prepared gunkan maki zushi because I asked about it ahead of time. A brief demonstration of how to create each type of sushi started the class and then we were left to our own devices. I really liked this style because I think most of us were experiential learners. We had to do the thing to learn it, get a feel for it. Jerry also cut some chu toro (medium fatty tuna) I managed to get before the course in order to add it to what was already available. Yeah, I'm a geek and, Jerry, well, he is beyond accommodating. Overall, it was a really enjoyable course. We learned a lot. Jerry is a knowledgeable and engaging person. It won't be the last time I'll be taking a class at Strickland Hollow.
