I asked if it was possible it had been butterflied. He tried it, and it was exactly what I was looking for! So I got my 5 cutlets, the price was great, and was I elated. (Whenever I cooked them, people always said they were the best veal cutlets they ever had because they were so moist and have no grizzle. Of course, I would fess up eventually, lol.) I asked if he might be able to make stuffed veal roasts and other types of roasts, and chicken rollatini. He said he could make whatever I wanted!! He told me if he didn't already know how, that If I told him what I wanted he would either do what I suggested, or research how it should be done. I struck pay dirt with this place!
