I prefer these over your standard pancakes which are often dry and need to be drenched in butter and maple syrup. These soufflé pancakes are paired with whip cream and some maple syrup. The syrup really isn't necessary and I prefer just eating the pancakes with the cream or without any condiment. The name says it all and the consistency of the pancake is similar to a soufflé you would have for dessert at a French restaurant. The tea was also nice. I would definitely come back here for the food. The restaurant décor is nothing that special so not really a place for the ambience, but rather is a great place for a tasty dessert.

My pancake comes out relatively quick. A light, fluffy cloud rich in the flavor of milk and egg. Like angel cake but creamier. It is so tasty on its own I don't need any sauce or cream to enrich it. I went with a dear friend at 11:30am and we were almost the last in line for the first queue. We waited over 1.5 hours before we were seated. While I was waiting I perused the menu. They had both savory and sweet pancakes and a variety of drinks like coffee, iced tea and milk tea. It was quite efficient; the staff knew exactly what they were doing and told us that we could serve ourselves with lemon water, regular water or hot water from dispensers on a table near the kitchen. The ambience inside was modern, bright and well lit (for Instagramming of course). There was a menu in Chinese with pictures so you just point at what you want. They did have a laminated paper of information like their free WiFi and IG account information. Under out seats were baskets where you could put your purses or whatnot. For someone who stresses out about where to put my purse in restaurants this was genius! I wish they had more of these in the States... After sorting out our purses we knew exactly what we wanted as soon as we were seated and ordered: Meal Pancake with Scrambled Eggs and Thick Sliced Bacon (HK$128): This came with three wheat pancakes, scrambled eggs and literally 2 pieces of bacon that were 2"x2" each. The bacon was tough to eat, scrambled eggs were decently cooked and the wheat pancakes were dense and dry. I was underwhelmed by this dish. Not going to order again. A Happy Pancake (HK$108): This is what we were waiting for. In its simplicity, it was soft, fluffy, airy and melt in your mouth delicious. My friend and I really enjoyed this. You don't need fruit, sauces or granola to make this glorious dish, well glorious. It came with a butter and a small container of syrup. We inhaled the pancakes and called it a day.
