The noodles were hearty and maybe were had pulled. There was a bit of cabbage in the soup and some cilantro for extra flavor. I enjoyed a cup of the complimentary barley tea that they provide as an option to water. The service was pleasant and the food was brought to my table really quickly. The interior is spartan but clean and organized. Thanks to the owners for keeping this place consistently producing a delicious product with fair pricing for the food. I'll definitely be back.

Came here on a Sunday evening for dinner and it was very busy. We were able to snag the last open table we saw. You order and pay at the front counter, then find a seat. Staff at the front were friendly. We ordered the Sour Veggie Beef Noodle Soup and Eggplant Tofu Dry Noodles. Our food came out pretty quickly and the portions were solid. The Sour Veggie Beef Noodle Soup was more sour than expected and lacked the depth and richness we were hoping for. We have had this dish at other places, and usually the vegetables are pickled and tart but don't impact the flavor of the broth as much. The beef was also cut into smaller pieces than we have experienced with other beef noodle soups. Texture of the beef was mixed with some tough pieces. The noodles were chewy and cooked well. We enjoyed the Eggplant Tofu Dry Noodles slightly more. They were more flavorful, although still on the lighter side. The eggplant was cooked really well and had a great texture. The noodles and tofu were okay. Overall, giving One More Noodle House a 3.5/5, but rounding down to a 3. Service is quick and portions are solid. It is self-service for cleaning up the table and putting dishes away. We had high expectations because of the Michelin Bib Gourmand designation, but unfortunately the food was disappointing. Not sure if we would return.

It is a strange request, but they accommodated me with no problem. They had a case at the front of the restaurant with grapes and strawberries, skewered and coated in a crunchy sugary coating. The shredded potato tastes like the best potato salad that isn't your picnic potato salad. The shredded potatoes were quickly blanched then stir fried preserving the crunch and crispness similar to al dente pasta. Seasoning was on point. The homiest flavor came from the stewed short rib. The rib pieces were braised in a soy and star anise sauce like what you find in Taiwanese beef noodle soup. The peels potatoes were cut rustically and just cooked through and not mushy. Authentic flavors and freshness like this is so so hard to come by. I can taste the quality of the ingredients used. One tip I have for selecting authentic food is by looking at the customers. If the customers are all Asian eating at an Asian restaurant, you know the food is going to be good.
