They say writing a review is kind of like riding a bike...you never really forget how; all you have to do is jump back on. You might be thinking to yourself: who exactly is "they"? That's beside the point my friends...after a long Covid19 hiatus, I'm back! Ok on to the review.... It's no secret Glyk is kind of a big deal, the reviews speak for themselves. As far as first impressions go, it honestly doesn't get better than this. Walking into Glyk Gelato almost feels like a fairytale. The lighting, the bright chairs and couches, and the charming hanging puppets. These guys absolutely nailed every detail of the setting. Actually I along with my toddler were so mesmerized, that we actually forgot we were there to get gelatos! Glyk features a pretty simplified menu of gelato flavors. I can certainly appreciate that as too many options can be overwhelming. Creative options like sweet corn or dulce de leche ride alongside classics like Vanilla and cookies and cream. I go for the Banana, cookies and cream, and Vanilla. The texture is exactly as it should be....velvety! Although clearly fresh ingredients are used, I am not completely over the moon about the taste. Many of the dominant ingredients are not pronounced enough. I'll admit I am a pretty tough judge on all things Gelato...I've had some pretty incredible ones, both in Italy and stateside. All in all, Glyk is a wonderful overall experience. Easy to see why it is a local favorite. I'll certainly be back. My toddler wouldn't give me any other option!

Waiting for my affagato!!!

I got the affogato with Niccolina (oh boy, something like that, it's hazelnut xD) gelato. AMAZING! The espresso had a mild bitter taste to it and it was so smooth. There were no acidic after note from the espresso (I don't know the proper etiquette of eating affogato, I drank and ate-- anyone got any tips, please inform my uncultured self xD). Gelato was soooooo yummy! It was creamy, smooth, and just the right amount of sweetness. I'm drooling thinking of it again . If the owner reads this, I'M COMING BACK!!! EVEN IF ITS 45 MINUTES AWAY! Y'ALL WILL SEE ME AGAIN XD Customer service was on point! The woman that was attending to us was SO sweet. She offered samples, napkins, bag, whatever you needed, she offered before even being asked. She was great! Best employee of the year! The place had indoor and outdoor seating. The indoor seating is super cute and cozy. There are puppets everywhere that are from Italy. Chairs were great! (Weird comment but I don't have a great back... so chairs are important to me xD) My friend got the Nutella Oreo cheesecake. I'm not the biggest fan of cheesecake but YUM. I had a bite, and then another xD definitely give this a try if you like cheesecake! Y'all missing out if you haven't been here! Big love for this place!

Grand reopening

During the pandemic, we have had so many businesses close in the greater Coral Springs area that it became difficult to recall the passing of every store. However, few have had the emotional impact on me that Glyk Gelato did in Parkland, which shut its doors in February 2021. Opened in August 2016 by Jaime and Samuel Kelerstein, former technology industry engineers, the shop was the lifelong dream of the father and son team to open their own ice cream parlor. But not just any ice cream parlor, an authentic Italian gelateria that made gelato from scratch. Before opening the shop, the two went to special schools in Bologna/Verona and Calabria, Italy, to learn the trade. Gelato is different from American-style ice cream in that it is made from a higher proportion of milk, not cream, doesn't use egg yolks, and has virtually no air overrun. This gives it a lower butterfat content and a creamier, silkier texture than other frozen desserts.  Glyk's founders took a different approach to gelato production than other shops in South Florida as well. Instead of producing gelato from a pre-pasteurized commercial base, including flavorings, Jaime and Sam chose to make artisanal gelato from scratch.  The family spared no expense on equipment and decor and made their gelato products with a Silicon Valley level of attention and detail. Each flavor of gelato was made a single batch at a time, in a labor-intensive process, just as it is done in the best shops in Europe.  The shop's visible behind glass gelato "lab" had a single pasteurizer unit in which the dairy and nondairy ingredients and all-natural flavorings (such as Belgian Callebaut chocolate, freshly roasted nuts, nut butter, and fresh fruit) were combined and cooked to temperature. After pasteurizing, each batch of "batter" was passed through a single gelato freezer unit and then dispensed for sale. After it was made, Glyk's gelato was stored in a special freezer designed to hold the product at an exact temperature so that it did not crystallize.  Unlike other gelato or ice cream shops, there were no flavors on display; all the gelato for serving direct to customers was kept underneath insulated metal covers so as not to cause thermal leakage and to prevent the product from melting and refreezing -- this is how it is done at the most traditional stores in Italy. But although you could not see the gelato, Jaime and Sam were happy to let you taste whatever flavors you wanted, listed artistically on a framed chalkboard. The result of their exacting and meticulous efforts was nothing short of spectacular. My favorite flavors were the Italian classics, such as dark chocolate, pistachio, and gianduia (hazelnut and chocolate). But because of the family's Mexican-Jewish heritage, Glyk also experimented with Latin American gelato flavors such as Sweet Corn (my wife's favorite), Avocado, Banana, Mexican Chocolate, and Dulce de Leche. Mango and Mexican Lime sorbets were also on the menu. And since Glyk had a dual E61 group Rancilio espresso machine, the shop could make cappuccinos. But my personal favorite was an affogato -- your choice of gelato "drowned" with espresso. Mexican Vanilla is a traditional pairing, but dark chocolate or having it with dulce de leche is fantastic. I was, of course, devastated to hear about their closure back in February. But Sam and Jaime kept the hope of reopening alive, saying that when things got better and could optimize some of their processes, they would be back in business. Naturally, I was skeptical. I'm delighted to say that Glyk has announced that they reopened on August 1, 2021. In addition to the store's products now being Kosher dairy and pareve certified by the Orthodox Rabbinical Board (ORB) of South Florida, they have introduced pre-made gelato cakes (hazelnut, dulce de leche, dairy-free cookies and cream, and dairy-free chocolate strawberry), as well as party boxes of mix and match individual flavors of frozen mini gelato pops or gelato scoops. There's also a new selection of vegan flavors available as well.

Love the decor and the gelato! I felt as if I were in a doll house. The colors, seating, marionettes hanging from the ceiling, adorable! They have familiar and unique flavors. The flavors are hanging on the wall, written on cute framed blackboards. The flavors change from time to time. They are all organic, GMO free and creamy delicious. The staff is friendly and helpful. Provided samples. I was curious so I tried the chai latte & sweet corn flavors expecting not to like them. To my surprise the opposite occurred. I went with the small cup of sweet corn. My spoon hit the bottom of the glass before I was ready to stop eating. So good! Note to self: medium or large never ever small. You can also mix flavors, have it in a waffle cone or take a pint to-go. Pretty glass jars are used for the take out pints. If you bring back your glass jar rinsed and cleaned, on your next pint refill (any flavor) you get a dollar off. Love the eco friendliness. They also have gelato pops, gelato cakes, shakes, teas, expresso & soft drinks. Really enjoyed my visit. Now when I think gelato, I think Glyk Gelato.

Delicious vegan flavors!

Best Gelato! Delicious flavors, creamy and bonus they have several vegan flavors in a separate area!!

Menu. Cutesy place!!

Reminds me of the gelato I had in Italy. Variety of flavors including novel ones like Sweet corn! We also tried Tiramisu, Cheesecake, Cookies and Cream--all quite yummy. I liked that they practiced COVID-19 safety measures. I'm glad I tried my friend's suggestions and would definitely recommend if you're in the mood for artisan desserts.

Great creamy gelato in a relaxing atmosphere. The staff is happy to be at work and excited about the product. The girl who helped me could explain the ingredients and production process. They have spa type music playing and the chairs are comfy with pillows. You may sample flavors before making your selection. Flavors change randomly. I sampled the avocado and sweet corn. Both were unique, but wouldn't want a whole serving. The owners are from Mexico so they like using different ingredients to make flavors. They also had Ferrero rocher made with non dairy ingredients. It was rich and creamy chocolate. They have gelato pies and coffee. I went with the cookies and cream. It's served in a glass dish with a real spoon in a saucer. It taste better with a real glass dish and silver spoon! It was very creamy and delicious. You could taste the freshness. It is $4.95 for a small. They weigh it to ensure you get what you pay for. There is indoor and outdoor seating. You can see the gelato making room and they hold classes too. There's plenty of parking in the attached lot.

Preparing my dessert
Julie F.

Ok so I'm reviewing my dessert before my lunch... but priorities, you know? I'd been reading fellow yelp reviews about this place for some time and it was on my to try list. So glad we finally made it to this area. The only quibble I'd have is that you have to tell them what size and pay before you get to taste the various flavors. What if I hated them all? What if I loved them all and changed my mind? They didn't have my fave flavor (coconut) today -- but I found out they've had it in the past; and they've never had my husband's favorite which is passion fruit, but we had a nice discussion with the owner so maybe sometime he'll try to add this into his mix. He explained that he does all his product development at home. Mixing and matching til it's perfected and ready to be introduced in the shop. They still had his seasonal pumpkin spice and he said he's working on a peppermint gelato and a cranberry cheesecake gelato flavor for Christmas time. He suggested we follow him on Facebook to keep up with the new flavors. So, never having been here before, I decided on a small cup to start. I tasted banana, Belgian chocolate, vanilla, and one other flavor. Wound up getting a mix of vanilla bean and dark Belgian chocolate. The actual glass ice cream dish was much larger than expected for a "small" size. Somehow I managed to eat it all! ;) Now don't let him know I told you, but my husband wasn't planning on getting anything. He was disappointed that they didn't have his favorites. But after trying the banana, I knew he'd really like that. After one taste, he wound up ordering mainly banana with a touch of the dark Belgian chocolate. I think he may have found his new favorite dessert... I liked the warmth of the venue -- no cold plastic and stark white chairs and tables, but a comfortable arrangement of sofas and chairs arranged in groupings. More like a coffee shop or a place to linger and chat. Will we be back? You bet!

Sweet Corn & Pistachio

8/12/2017 - DREAMING OF THEIR SWEET CORN GELATO! Walking in to Glyk, you feel like you are in a fancy doll house. Pastel colors adorn this very relaxing gelato parlor. We were greeted by the wonderful staff. They immediately knew we were new to Glyk and preceded to inform us about their assortment of gelato, made from fresh ingredients, no artificial colors or preservatives and also their gelato pops, shakes, affogato, cheesecake and more. After looking at the flavors on the wall, my eye went directly to the Mexican Lime. I was offered a sample. This flavor tasted like a delicious perfect margarita, the flavor of the mexican lime was both sweet & sour. Then I saw it...SWEET CORN! I asked for a sample. This flavor I can only describe as "my mom's harina" (cornmeal) and it was just heavenly. It is a house specialty as well as a family recipe. I just had to have it. We ordered the medium size and ordered two flavors. I had the Sweet Corn and Pistachio. The pistachio was so rich and savory. After finishing our gelato, we had the Afoggato which is gelato and espresso. The presentation was done at the table by the manager. They bring the gelato, then pour the espresso and then the chocolate shavings are added. The service is impeccable. We were constantly being checked on. The manager came to our table and we talked about the art of gelato. We also asked him about the marionettes hanging above. He tells us the owner is a collector. Ask him about the the three on the right. I highly recommend GLYK, we had such an enjoyable time. I will be back for that Sweet Corn.

Jar - three flavors include: cheesecake with oreos, noociola, and pistachio.
