Side note, I've heard the owner fell in love with Australia, which is why he/she named the place "Australian Ice Cream," even though the country doesn't have anything to do with the ice cream necessarily. Additional side note, you can find Australian ice cream in the grocery store or even at other locations (De Haan--the Belgian coast), quality is just the same! Enjoy!

I could tell there's no science behind her cooking. She kept opening the cooking gadget to check the doneness of the waffle. Once it looked toasted, she served it to us. It's something different than what we normally have for lunch/brunch and everything in between. They have bagels of the month on their board, that might help you with your choice. The staff was friendly and kind. I finished off with a carrot cake, oh my oh my! Tasty, not heavy on the sugar: it's served with a syrup that fits it perfectly. What's the point in a trip of Belgium if you don't stuff your face with a waffle at some point?…read more With this in mind, I demanded to be taken somewhere that was serving fresh waffles. Not that there's a shortage of these places, especially close to the old town where they have them sitting in their windows to entice people. It works too, often these places have queues out the door and down the street. Anyway, after queueing here for only a short time I chose I waffle topped with strawberry sauce, whipped cream and fresh strawberries, while my partner (with an unexpectedly less sweet tooth) opted for a plain, sugar dusted waffle. We took a seat in the small cafe area in the back, but could just as easily taken them to go. It was great. The fresh waffles here always are. Probably they could have gone easier on the strawberry sauce, but that's just personal preference. The waffle was delicious. I've been wondering if I can get a waffle iron and make my own ever since. Oh, and if you're not feeling waffles they also do crepes, as well as juices and milkshakes.

Since it was a little after opening, there was a lot of seating available both outside and in. The Galeries Royales Saint-Hubert location was already impressive with its 1800s glass enclosed shopping arcade but we opted for inside seating to be surrounded by the beautiful woodwork and colorful panels of the restaurant. Staff were friendly and service was leisurely which allowed us to linger even after we finished our drinks and waffle. They served both Brussels and Liege waffles that could be customized with your choice of toppings or a bunch of set combos. We decided to share a liege waffle with stewed strawberries and it wowed us. We loved the sweetness from those unusual stewed strawberries (looked no different to us) on top of the crunchy and caramelized liege waffle. It was the perfect pairing and worth the splurge. We also appreciated the large glasses of cold lattes which provided a much need jolt of caffeine on an already quite warm morning (June heatwave throughout Europe). One knit pick was the table we chose wobbled a lot but with a folded napkin underneath temporarily stabilized it.

Again, the waffle and strawberries weren't warm so it was like eating a dry stale cold waffle with cold strawberries and a scoop of ice cream. Disappointing to say the least. I'd pass on this place and stick with the street vendors where you can watch them make it in front of your eyes and served warm.
