So I'm glad this one in Pearland opened up fairly recently and we got to go here with good friends! The place was bustling on a Monday night with several diners coming in and out and various takeout orders being made. We skipped the dumplings and went straight for the plates. We ordered the Dry Fried Spicy Popcorn Chicken, Mabo Tofu, Ground Pork with Bean Sauce Dry Noodles, and the Mix Flavor Eggplant. The Dry Fried Spicy Popcorn Chicken came out as a huge portion - this is a must-do anytime we get Szechuan food. The chicken was crispy and the side of rice was served on the plate. The Mabo (Mapo? never seen it spelled that way) Tofu was flavorful. It had a good spice to it and was big enough to share. The Ground Pork with Bean Sauce noodles was tasty - the pork paired well with the bean sauce and the dish was topped with sliced cucumbers and peanuts, which made me connect this as a sibling dan dan noodles. The mix flavor eggplant as seasoned really well and was a nice veggie to balance out the other meats we ordered. I expected this to just be a stir fry dish of sauced eggplant, but to my surprise, it was served on top of their signature handmade noodles. Service was friendly and efficient. Our food started coming out within 5 minutes of ordering and the servers kept our waters filled. The only disappointment here was that we asked for scissors to cut the long hand-pulled noodles; they gave us a knife because they didn't have any clean scissors. NOT THE SAME. We hinted that if a pair of scissors happened to get cleaned, we'd love to get it, but we never did unfortunately. So we struggled and played spaghetti with our noods, not necessarily a bad thing. Towards the end of our meal, there were still a few tables dining in, and our table stayed to chat a bit. The staff had no problem with this and even still refilled our waters after we checked out. We had a great experience at the Pearland Noodle Master and will definitely return again soon.

The restaurant is clean and you can see right into the kitchen. I like being able to see the noodles being hand pulled! The staff was friendly and made me feel welcome.     01.16.26 had dinner with a very close friend of mine today…read more service, presentation, and food is very consistent and great here, i also like they dont change the recipe up, they keep it the same everytime. my close friend mentioned to me that she saw the noodle master thru the glass window, making the noodles, and after she ate what she ordered, the soup, she said very good, i cant tell they dont use a lot of salt like some other places do. we will definately be back. keep up the good work !

We were seated and we felt like we were inconveniencing the waitress as she seemed to not really want to be there at all. It felt like wanted to take our orders, and leave our table ASAP. Maybe she was having a bad day, but it did not seem like standard service. The "fresh" soup dumplings were so thick and chewy. Normally soup dumplings are supposed to be thin and delicate but these were the complete opposite. The beef noodle soup lacked flavor all around. I ordered it with wide noodles as the server told me they were around half an inch wide, my noodles came out and they were over an inch wide... which is not what I expected. The scallion pancake was the best item I had that night and that says a lot since it was probably frozen/pan fried. The poor service coupled with the food definitely left a bad taste in our mouths. But all things must change and I checked out Umi Sushi & Ramen for dinner on a Sunday evening. Parking is easy in their complimentary lot that they share with a bunch of other businesses. Service (4.5/5): We were seated at a booth in the corner and our waitress made sure to check on us regularly. A little too much for my liking but over-service is certainly better than under-service. She was friendly too so I appreciate the effort. Ambiance (3/5): Your typical neighborhood Japanese restaurant. Cozy yet unremarkable. Which isn't a bad thing. I wasn't looking for fine dining. Drinks (4.5/5): I'm a bit predictable when it comes to my drinking habits at Japanese restaurants. Give me a hot house sake and a Japanese beer. Rinse repeat. Umi delivered here. And for a good price. Happy camper. Food (3/5): This is where I was wanting a little more. We started off with the edamame as an appetizer. It was a bit bland. It needed a little salt. Easy fix. From there, I went with a specialty sushi roll called the Japanese lasagna. How can I say no to a dish like that? While the name was fantastic, the roll was a little underwhelming. And I was still hungry. So I ordered the tonkotsu ramen. I've had this classic ramen dish many of times and I've seen it done at a high level. Umi's attempt is mediocre. The broth hasn't had the care that is needed for a dish like this. Nor was the pork chasu up to par. Not a bad dish, but again, underwhelming. Despite the quantity of food I ordered, the price was acceptable. At least there's that. I'm not a connoisseur of the dining scene in Angleton but I'd venture to guess that it's one of the solid options in town.
