We stopped by Gibb's Cheese in the Findlay Market as part of a food tour. They have an extensive variety of cheeses and fudges. We got to try the champagne cheddar and the apple cider fudge. The cheese was delicious and the fudge was good but not a flavor I would choose again. They had many other flavors I'd love to try though including pumpkin pie, praline, and Payday. The flavors change with the seasons, so it would be fun to try lots of varieties throughout the year. read more

On Saturday, May 2, 2026, an employee at Gibbs Cheese & Sausage, at Findlay Market, snatched off his cap and apron in a rage, and in front of a crowd of customers & co-workers, he used foul language, calling me and my companion c---suckers (an old gay slur that rolled quickly and easily off his tongue) and threatened us with bodily harm. He dramatically stormed the back entrance of his work station to approach us in the common area of the market to "beat our asses." We have since learned that his name is Sid. That's him in the blue cap. Why? Twenty minutes earlier, we'd stood in a long customer line that went all the way back to the next vendor. Sid repeatedly ignored the line by helping random customers who congregated in front of the line. After waiting an inordinate amount of time, he finally worked his way to us, and that's when I decided to call it to his attention. I wasn't rude or nasty; he just didn't like being called out! "Do you want to place an order or not" he says. I ignored his surliness and attempted to place an order. "Just shut up already" he added before I could get my words out. He pushed the final button, and for a hot minute, I sank to his level; we traded profanities and then I left with my companion. We didn't have to think too long to decide that his flagrant display of disrespect was not acceptable. We chose to launch a formal complaint. To show exactly who we were dealing with, we came back to snap his picture. We told him that he didn't get to treat us with such disregard and expect us to spend our money with Gibbs. That's the moment he lost his mind! Before the situation escalated any further, we left the establishment again, this time seeking the assistance of John Bird, the director of Market Operations, at Findlay Market. Mr. Bird assured us that he would talk with Claire and Jeff, the Gibbs owners, but warned that any disciplinary actions would be up to them. Weeks went by, and we decided to reach out to Gibbs ourselves. Over the phone, Jeff acknowledged that he definitely heard from several sources what happened. He gave us a weak apology and tried to justify Sid's behavior. We all have bad days, but there is no justification for Sid's arrogance, anger, and unprofessionalism. We're not of the customer-is-always-right school, but Sid was WRONG! It was an ugly and extremely uncomfortable situation. We shop at the market on a weekly basis, and don't feel as if we have to tip around a powder keg. Perhaps that's how Gibbs feels about their repeat customers. Perhaps that's how they do business these days - a tap on the wrist for ugliness that would've gotten anyone else fired! Yes, we think Sid should be FIRED! Oh, and might I add the employee pictured in the red cap cursed us and royally gave us the middle finger as we walked away. For all of these reasons, we're no longer Gibbs' customers - and Jeff agreed that was a determination we had to make. Today, I visited a store to purchase some slices of salami. As I waited in line, a gentleman stood in front of me. When the employee asked who was next, I politely pointed to the gentleman. However, the employee responded with a disrespectful attitude, using aggressive body language. I believe that the staff at this establishment could benefit from customer service training on how to interact with customers. Gibbs is the only place where I'll buy my luncheon meat and cheeses. What won me over was ordering a quarter pound of turkey. Unlike chain grocers, I didn't have to translate to the clerk, "I need a point-two-five of turkey." Strolling past the counter, Gibbs piqued my interest in adventurous new foods. With several dozen kinds of cheese, I was reminded of my days grocery shopping in Europe. There are many types of French, Italian, and Swiss cheeses and minimal orange-colored Americanized cheeses. (That's right, Cheddar is a white cheese dyed orange to appeal to American consumers.) Both meats and cheese are cut fresh from the wedge for each customer. Every time I go, I try a new exotic cheese. The Blueberry Stinton is great as well as the Peppadew. For sandwiches, I go with Havarti, or trusty ol' Provolone (the big slices). Sometimes Gibbs even carries the elusive cheese curds! The clerks are very knowledgeable about their products, and love having conversations about flavors with the customers. They even offer free samples of unique cheese to those who are curious. The owners have established relationships with their vendors and also hand-select items such as cheese curds. I trust that I am getting high-quality luncheon meat when I buy from Gibbs. Gibbs and the Findlay Market experience go hand in hand. It's quality service just like the old days, with Uncle Gibbs stocking you up with a weeks worth of sandwich supplies. read more

Incredible selection of cheese and incredible customer service. For the quality of cheese you get, the prices are actually really decent. Also, you can get high quality eggs for a reasonable price. Going during the week provides for a much more relaxed Findlay shopping experience, but Gibbs' alone is worth maneuvering through the weekend crowd! read more

I had a wine party where I bought 5 different international cheeses from here and it was a hit! They were pricey but they went a long way. My cheese tray was not only impressive but reflected the kind of diversity I have in my life (and my parties). My favorite was a cheese from England with vegetable ash in the center. I've never had anything like this before. There were other cheeses I liked but this one stood out the most. The variety at Gibbs is mind blowing and it would take months if not years to try them all (Unless you went everyday and actually tried them all). I got to taste everything before I bought it and ended up spending over $80 on cheese! My wife is lactose intolerant but even she had to partake when I showed up at home with all of the different flavors. I haven't had any of the meats but if they are anything like the cheeses then I'm sure you will be happy with whatever purchase you make. Great spot to get your cheese game on with friendly service located inside Findlay Market. Been here numerous times and always a huge selection and cheese and deli along with other extras on the shelving (jams, etc) that are competitively priced. Most recently got the Garlic Brie & Blueberry cheese of some sort and both were amazing for an assortment I had at home to put together my own charcuterie. read more

Gibbs lives up to its name and more. Their cheese selection is fantastic. It's true that Silverglades gives them some stiff competition but they keep a good supply of imports and domestic cheeses. The sausage is also good. The fudge display on the corner always catches the eye of passer-bys. I think it's their secret way of getting people to complete their grocery list at Gibbs'.I haven't tried their peanut butter yet but I plan to on Chris' recommendation! What a great place - they have a wonderful selection of cheeses (that's what I usually buy when I go there), but they also have meats. I haven't experienced to much with it, but they have like 5 different kinds of pepperoni...FIVE!!! I didn't even know that many existed. Needless to say, I'm will be making a 5X-Pepperoni Pizza in the near future. Anyways, back to the cheese, it is after all in the name. Their selection of cheese impresses me. I've many times gone in knowing a type (i.e. Swiss, or melty Mexican) and they have exactly what I need. If you get enough cheese they will happy to shred it as well. They always allow for slicing. My wife and I discovered this cheese in St. Louis. The next weekend on our usual trip to the market I ask around for this particular item. It was only Gibbs that had heard of or knew how to obtain this rare cheese. After three or four weeks of dealing with suppliers and distributors they had my Gjetost. Thank you it is wonderful. More cheese than you can ever imagine. They're a little pricey on the cheese, but that's because they stock mostly gourmet cheeses. Gibbs is my favorite place at Findlay for fresh mozzarella and prosciutto, and their feta cheese is pretty delicious as well! The rest of their deli meats are pretty delicious as well, but a little on the pricey side. read more

Gibbs Meat 'n' Cheese is where it's at!! The staff is very knowledgeable of their product, even more importantly they are very friendly and don't mind my countless questions on the vast selection they offer. Their meat selection is more than pleasing to the palate and offer for great pairings with the cheese. The lunch meat is top quality and I always leave with more than I planned.
