We were told by our wait staff that they did have several to go orders ahead of ours and that's why it was taking so long, I think they were just understaffed. The sushi was just okay. Fuji Yama is my favorite sushi restaurant in Virginia Beach. All staffs are nice there, especially the boss. She is super nice and did care about people. Every time I came, she will chat with me. She makes sure all food and sushi are fresh. Dragon Roll, Friday Night, Twin Tower are the rolls that I order most often. Dragon roll has cucumber, crab meet, tuna inside, and avocado, eel, and roe on the top. Friday Night has shrimp tempura, crabmeat and seaweed inside, which is really special. I have never tried the rolls with seaweed in other restaurants. Twin Tower is my favorite, there are shrimp tempura an ell inside, crab meat and avocado on the top. Takoyaki is off-menu dish. It's only available when the boss is here. But I do think it's the signature dish. You can ask if it's available. If I can rate 10 stars, I'll definitely do. On Sundays they are open at 12p for lunch. The place was empty provided we got there when they just opened. One person was waitressing, and seemed to be doing well. My only complaint is that the rolls were drenched in sauce and the kani salad was not thawed completely, it was cold like ice and if you follow my pics, i order kani salad everywhere i go. This is my favorite sushi place. When I lived out of town I would always stop here during trips to visit family and it definitely encouraged my decision to move back to the area! Tonight was the second time I came to this restaurant and just as before, this place is 5 stars out of 5. The hospitality of the waitresses is unmatched and the sushi chefs are amazing! The restaurant is clean and organized: not too crowded and offered room to breathe and feel like I can still hold a conversation with the person I am with. Not pictured: For our appetizer we always start with the pork gyoza. There's not much to say about this dish other than they are the best gyoza I've had in all of the sushi restaurants I have gone to thus far. The sauce is flavorful as well as the gyoza themself. They also get you started with some cucumber salad and it's delicious! It's nice and tangy, but also extremely fresh! As for the sushi itself, this place is unmatched. We ordered the crazy stone roll, crazy volcano roll, super duper roll, twin tower roll, pink dragon roll, American roll and two orders of crab stick sashimi (not pictured) for refreshing our pallets and a side of eel sauce. Each roll is perfectly crafted and our food arrived in a reasonable amount of time, with having deep fried rolls and fresh rolls. My favorite for the night: volcano roll and the twin tower rolls!! We finished the night off with taro ice cream which is heavenly! Our bill came out to $80 before tax and $90 after tax. We even had some cheesecake on the house! I ordered takeout here for convenience to my marina location. I wasn't impressed by the fish quality, but I already knew that going in based on the other review photos. I think the red-based restaurant lighting inside is partially responsible for that. They were nice people though, which is why I'm leaving 3 stars. I wouldn't order here again though. Walked in on Mother's Day to order take out. Was greeted right away, super friendly staff, gave me all the time I needed to look over the menu. I tried the Fuji Yama, Crazy Yama, Earthquake, and volcano roll (they gave me this one on the house!). All were so delicious and presented nicely, Fuji Yama was my favorite. It was a short wait too, it only took them 10mins to prepare. I waited inside where all the floors, walls and furniture looked clean and nicely decorated I'll be dining in next time. Today my boyfriend and I went and got lunch here around 1230. It was relatively empty, and we had quick and prompt service. I got a candy cane roll and a tempura shrimp roll in my lunch box, and my boyfriend got the candy cane roll and tuna roll. The candy cane roll is SO good, and I haven't found anything similar anyways else. The lunch box comes with salad and ginger dressing, rice, a cucumber salad, and a miso soup.
