It lacked the dark roux that gives gumbo its signature flavor, had very little liquid, and mostly consisted of chunks of chicken and okra over a pile of rice. The gator bites were probably the best thing I tried -- even though I only tasted one, it was quite good. The red beans and rice were decent, with the highlight being the sausage, though there were only three or four very thin slices. I'd love to find that sausage again! The shrimp and grits I sampled had good, creamy grits, tasty shrimp, and a tomato-based étouffée-style sauce that worked well together. The waitress was prompt, the food arrived hot and on time, and overall it was a decent experience -- but not quite what I'd consider a true Cajun restaurant.
