Kept its Michelin star for 2022 and had it since 2004. The food is really quite amazing. Coming from Singapore where there are lots of Michelin starred restaurants, the food here beats many of them easily. They cooked their quail to perfection and their sorbet was the perfect was to end the whole meal.
The 1st photo - Blackcurrant leaves sorbet with birch syrup, kefir, merengue and woodruff. The 2nd - sorbet lollipop. The 3rd - Quail breast with stuffed morrel, pistachio, pickled fennel and pepper sauce. The 4th - Quail leg with carrot, garlic, ponzu and yuzu blanquette. The 5th - Squid with new potato, elderflower, green strawberries and ramson. The 6th - Fjord shrimps with smoked habanero, finger lime, variations of tomato and aromatic herbs. The 7th - Kalix lojrom with a crisp salad, oyster, seaweed and gooseberry. The 8th - bread with homemade butter. The rest are snacks. read more
