Fork U Food Truck is a Hawaiian food spot on wheels that has been around Vegas for about a year now. They appear to be helmed by a former pastry chef of Pinkbox Doughnuts. I happened to see the truck around lunch time at my local car dealership and decided to give them a try.
Poke Nachos ($13.50) sounded the most fun of anything on their menu, and probably are the most fun too. Crispy fried wontons, roughly cubed tuna, two sauces, and a surprisingly wide variety of various toppings make every bite a little different but just as onolicious. The grape tomatoes, edamame, and seaweed salad are not items I've seen in this exact dish before, but they all work. It's a surprisingly large portion, but make sure to eat about teo chips per tuna chunk. Although it's boxed and bagged for takeout, it's much better enjoyed ASAP or else the wonton chips can get soggy.
No credit card fee appeared on my receipt. They text you when your order is ready, but I met the cashier halfway as she was actually going to walk into the building to find me. I'm not really sure if anything I saw is considered part of their "rotating secret menu" and I wasn't in a hurry to ask since it was my first time trying them.
