I went into the office and saw my favorite poke spice so I picked up a pouch of that as well. Minutes later a friendly lady brought out a rack of fish and loaded it into my cooler and packed it with ice. I tipped her and was on my way quickly. When I got home I realized how clean the cuts were on the fish. I believe they get about 30% yield which is understandable as there are many bones, blood lines and skin that is not saved. I am not sure if you can negotiate to have any of that stuff saved if you like to make fish stock or have spoiled kitties like I do.
