When I finally visited in person I was surprised to find that it is a small, takeout-only operation with a few outdoor tables on the sidewalk. The limited menu features about a dozen bagel sandwiches, coffee, and matcha, all served through their walk up window. The Sour Seed concept began as a pop-up following the COVID-19 pandemic. After leaving a Miami restaurant partnership, Slawson began experimenting with dough, based on his background in sourdough pizza. He tested bagel recipes and eventually developed a distinctive style with a light, airy interior and a crispy crust. The concept officially launched as a South Florida pop-up in 2022, and in 2025, Sour Seed Bagels opened its permanent brick-and-mortar location at 325 Fern Street in downtown West Palm Beach. Metered street parking is available. What make the sour Seed bagels different is their flatter shape, crispier texture, and noticeable tang from the sourdough. The shop uses certified organic flours from Central Milling to produce its 100% organic sourdough bagels in-house. The bagels combine the chewy crust of a traditional baguette with the light, open crumb of ciabatta. Everything is made in-house, including specialty spreads such as Calabrian chili cream cheese, vegan options, house-cured or wild caught fish, and breakfast sandwiches. Go early if you want the full selection of bagels, including sesame, everything, and rosemary. A customer favorite is the smoked river trout with pickled onions and dill, paired with the shop's preserved lemon and chili cream cheese.
