Music choices are all right but not exactly my cup of tea. Adult contemporary/R&B/Soul. Jamiroquai, Talking Heads, Marvin Gaye, Thee Sacred Souls, Stevie Wonder (I Wish), Curtis Mayfield (Pusherman), Sly and The Family Stone.
I like to order mocktails these days. Rhubarb and magnolia soda was sweet and refreshing.
Amuse bouche - smoked trout, roe, apple gelee, elderflower. Hash brown, chicken liver mousse, dehydrated egg yolk. The hash brown had a distinct "Lays bbq potato chip" flavor.
Venison was chewy like a tuna sashimi. Sourdough crumbs provided crunchy texture. Mayo, essential oils emulsion. Good use of textures on this dish.
Bear barley bread from Orkney (the Barony mill). Butter and brunost (Norwegian soft cheese, brown). Sourdough warm and soft.
Beets and asparagus were all right. I don't really like beets generally.
Crab, daikon, lime, mint. Sort of XO Szechuan sauce.
Turbot wrapped around fish mouse topped with fermented vegetable paste surrounded by fish sauce with garum.
Duck came out lukewarm, almost neutral temperature. Not sure if that was intended. Pheasant backed mushroom with black currant leaf.
Cheese and onion tartlet using Scottish cheeses and pickled onion. There's a springiness to this dish. The cheese flavor is quite strong and savory.
Gooseberry puree on a biscuit with elderflower foam and gooseberry sorbet.
Shitake macaron (sweet) and toasted marshmallow. read more
