The best way I can describe a birria taco, is as if Mexicans had invented the French Dip. Meat and cheese-stuffed, fried up, and then served with a side of consomme to dip it in. Meat was flavorful, tortilla shell perfectly infused with flavor and yet still delightfully crispy. The dipping soup was bold---I found myself taking a few sips after I had eaten everything.
