Love this food. I have eaten there at least a dozen times. Food is always hot,fresh, and includes big chunks of fresh limes. Went to the yellow truck in north FoCo yesterday in a red van. We got 3 orders of tacos. 2 shredded beef and one ground. They came out and were all shredded beef. No biggie but and we ate in the parking lot. The food just simply SUCKED. No flavor! All three of us agreed and one of us threw theirs away. Bland, meat had zero flavor. Tortillas were bland, the hot sauce was some orange sauce that also had zero flavor. The guacamole sauce was also lame. This truck may look like it has bomb food - but it was HORRIBLE. I will give it one star because it didn't give me indigestion but I'm an excellent cook and as I ate this food I wondered how they mess up street tacos?... . Baffles me. Perhaps try some chili powder, chorizo, or some sort of flavor. Guess that's what The 3 tablespoons of salt they gave us with the condiments was for Even the fresh cilantro was bland. Geeze. So either Coloradoans are are tone deaf when it comes to tacos or they can't taste anymore. How this place gets good reviews is mystifying. Its tacos.... how in the world does one make, sell and serve this cardboard? I'll tone down my review if the owner contacts me and arranges a refund. I stopped by Tuesday afternoon after an appointment and got three of their Carne Asada tacos price was about nine dollars for three tacos plus the sauce they gave me had lots of flavor was very authentic love the way they combined the beef, the chilies and the onions and cheese they were street tacos so they were very, very good I will definitely return and try the Barbacoa next time. read more

Omgosh! The only thing that would have made my visit better would have been if they had a tshirt or koozie I could buy (since my name is Maggie)! We ordered the breakfast burrito. Bring a friend or come extra extra hungry because the burrito was really big and soooo delish! Wish I was local so that this could be on my weekend breakfast rotation. Food was okay when we got it, service was terrible. Had to go back 3 times, was charged twice. They even tried to charge a third time. It took longer than 20 minutes to complete our order. The coke in a bottle was too warm to drink and they had no ice. This was not during a rush or anything like that, the last 10 minutes had no other customers. IMO, the best Mexican food in Colorado can be found away from the city center at a taco truck. Stopped by this place at the recommendation of my summer intern. Was skeptical, given that the taco truck on the other side of the street is very good, but walked away surprised with the carne asada torta (steak sandwich). Only recommendation I have is to not chop the steak too fine; that way it doesn't fall apart while your trying to eat it in your car. But that's probably more user error than. Stop by this place if you're craving tacos. They won't disappoint and the family is really nice! read more

I stopped to try the tacos today while I was visiting Jax. The smell of their cooking, as I walked out, was wonderful and it made me hungry. My wife and I decided to try the street tacos, 3 chicken, 2 barbacoa, and one carnitas. I was impressed with the service here and felt very welcome, even though this was my first time ordering from their truck. The tortillas were soft and delicious and the sauces were awesome! The chicken was perfect, seasoned just right, but the barbacoa was fatty and not my style. I also enjoyed the carnitas and they had a nice flavor that paired well with the avocado cream salsa. I am interested in trying the fajitas or some of their other offerings! There were three other taco trucks on north College Avenue today, but this was the only one with people standing outside to get food. That should tell you something. I'll be back! read more

First, a little background about food trucks. In the 1990's, food trucks were much different - you didn't have a vast selection of specialty foods available. A food truck was more like a mobile convenience store, carrying the expired stuff that 7-11 had unloaded for 1/2 price in the wee hours of the morning. You only went if you had forgot to pack a sangwich or you didn't have time to leave the construction site. Nowadays, you can find energy drinks (yah) but also fish n chips, good Mexican, burgers, all kinds of food. Maggie's is a good Mexican food truck, better than 80% of the Mexican brick-n-mortar places in Fort Collins. The day I encountered Maggie's ,they were parked in the lot at Jax (the one in town, not the ranch one up by LaPorte). I was disappointed that Jax didn't have what I needed, and what's better than drowning your sorrows in food? Which I enjoyed. I got a chorizo breakfast burrito and a couple of Al pastor street tacos. The menu seems fairly large, and they had even deployed a picnic table and some plants to give the place some atmosphere. By virtue of location, one of the best restaurants in north Fort Collins. They're presumably mobile, but if you see Maggie's at Jax, you should stop and feed. read more

Maggie's is so good. I'm from California and was missing the tacos back home until my roommates introduced me to Maggie's. They brought me some on Sunday, and I proceeded to get it the next two days before leaving town. I'm obsessed. I honestly think it's cheaper than buying groceries. The pollo asado is to die for and the carnitas is also stellar. I'm removing one star for the barbacoa which I honestly found to be extremely oily and flavorless. I couldn't finish my two tacos when I got it. They aren't really able to do customizations, so keep that in mind. I tried another place tonight that's a little closer, hoping it would settle my craving, but all it did was make me regret not driving across town to Maggie's. I wish I'd found this place before my senior year! read more

Whoa! I tried these today for the first time. Had I known how amazingly good these tacos were, I would have visited them a long time ago! They have a new customer now. The pollo (chicken) was really lean, grilled with mild spices, juicy and delicious. The cilantro, just the right amount as was the finely diced onion. The tortillas tasted fresh and homemade. An order of two tacos came with four tortillas so I split the ingredients and was able to make four tacos which ended up being a $1.00 a taco! Those are Texas prices! They came with two salsas. A cream based pepper type and a medium spice red. And, fresh lime. Give em' a try. This is an under-rated Taco Truck and absolutely delicious! read more

Just moved back to Colorado from San Diego, which has incredible Mexican food due to its proximity to the border. Maggie's tacos brings me back to that great tasting Mexican food.
