I was delighted to discover that their food options have expanded with two food trucks outside the Brew Barn -- one being TimberFire. The enticing waft of wood smoke from the brick pizza oven in the back -- mounted on a cart for transportation! -- immediately piqued my interest. But it was the chalkboard sign announcing that gluten free and vegan options were available that made me jump in line (and jump for joy). That magical combo of GF crust and dairy free cheese is still not that common, and it's even harder to find ones that taste good. Since I have a gluten sensitivity and am allergic to many forms of dairy, I was intrigued to try. The Tall Man and I each ordered one of the specials, The Fungus Among Us, which features mushrooms (of course), caramelized onions, and garlic cream sauce. He got the full gluten and dairy experience (aka refused to share in my limitations), while I got mine on GF crust and vegan cheese. In lieu of the sauce and their other alternatives (I also can't eat much tomato, and their pesto has parmesan), I suggested straight up olive oil to stick it all together. I was already holding up the line with my multiple questions, but they were very friendly and were happy to answer while busily stretching dough and checking on pizzas in the oven. 20 minutes later, we picked up our pies plus one for friends. (Unlike the Brew Barn, which will text you when your food is done, TimberFire calls out names so you have to stick close by.) Verdict? Delicious, especially straight from the oven on a chilly fall day! They used a premade GF crust, but one that had a pretty good crispy texture when fresh. Vegan cheese was all melty and creamy, so I didn't miss the sauce at all. The mushrooms were fantastic and generous. The Tall Man really liked his version of the pizza, reporting the sauce to be clutch. Our friends' Fresh to Death (aka margarita) pizza was pretty good, maybe not as wow-ing but satisfying both adults and children. I was quite happy with my pizza's flavor, but wish it were larger for the price ($18 per pie), with the GF one being smaller (10"?) than the hand stretched counterparts. They're closer in size to a medium pizza elsewhere. The Tall Man easily finished his whole pie in one go, while I ate half and saved the rest for leftovers. This is a kitchen that respects itself. In our household, the test of any new pizza place is the Meat Lovers. How they source and treat their meats tells you everything you need to know about the operation. The Meats - Sausage: Real fennel, real bite, real flavor. Not the bland, gray mystery pellets you get from bulk suppliers. - Hamburger: Not frozen, not imported, not filler. This was actual beef with actual mouthfeel. - Bacon: If you screw up bacon, you shouldn't be making pizza. They didn't screw up bacon. The Cheese This is where Parker House flexes. The cheese didn't pull to the center. It didn't puddle. It didn't run away from the crust like it was scared. They understand alchemy -- the cheese stretched all the way to the edge, binding the whole thing together like a culinary spell. The Crust Not too thick. Not too thin. Didn't break your teeth, didn't flop like a sad handshake. It had enough structure and flavor that even people who normally abandon the end crust will finish it. That's rare. The Sauce This wasn't generic red paste. This was the Parker House Blend -- zesty, bright, flavorful, and confident. It held up the toppings without masking them, and it complemented the cheese instead of fighting it. The Aftermath We devoured the large pizza. Then we sat there in silence, staring at the empty box, realizing what we had done. Deep shame. Zero regrets. Next Steps At this point, we're going to have to go down there in person. I want to study the ambiance, meet the people, and maybe film a segment -- and I have a strong suspicion they'd welcome it. Other items ordered at our table, included the muscles, which were excellent, two muscle options were available that night. The scallops were also very good and also served on a bed of pasta. The Caesar salad I ordered was excellent and loaded with anchovies, which I love. However, others may want to hold the anchovies, but that's just how I like it. I'd come back for the Caesar salad alone. Excellent cocktails across the bar at a reasonable price. Very good wine list again with good pricing. Perhaps the only negative thing I could say is the corkage fee was $35 which is a little bit high even for California pricing. However, overall, the pricing here is very good and fair. We were here on a Monday night so they were not busy and service was excellent. This is a local gem and I definitely would recommend and hopefully will return soon!
