I like the concept of making the pasta and salad dishes to order, quickly & in an open kitchen way. I've had the Salami e ricotta con rucolla and Carbonara Salmone and both were very good. For pizza, I've tried the Salame & Chèvre Con Fichi which is very light and tasty given the mix of Chèvre, Fig & Honey. There is paid parking in the enormous garage or you can take the train and exit at Hyllie Station. Upon entering, you are given a card. Whatever you order will be loaded onto it via touch pad. Your chef will process it. You'll order drinks from them as well unless you just want water. There is a water dispenser with glasses for no charge. Everything is done in front of your eyes. They'll ask if you want garlic, chili pepper, herbs, etc. You get to choose your own pasta, too! It's super fresh as they make the pasta in-house. You should always get a side of bread. Ask for it if you don't get any. There are delicious oils and vinegar at the table if you wish to dip your bread in. Seating is casual. First come basis.

Lunch times are busy especially around the holidays but Hatoba seems to cope with this elegantly! It is always a plus in my book when dishes are served on the timely manner and when the staff have it all under control and correct dizzy or low on sugar costumers trying to grab the wrong order from the window! Furthermore the prices are quiet reasonable considering the fact Hatoba, or for that matter any other restaurant being in this posh shopping mall, must pay a fortune as rent. What is served might not be a Japanese culinary experience you'll remember nevertheless the sushi is fresh and tasty. Not so exciting species but the more traditional cuts of Salmon, Tuna and Shrimp. They are all nicely cut, not too thick nor too thin, the rice is mixed with just enough vinegar and holds its shape when dipped in soy sauce. Perhaps a little too dry for my personal taste though. I even enjoyed the Maki rolls that are decent in size and filling. But it's still a con, however far too many others than Hatoba are guilty of this, to use crab sticks instead of real crab. I also might add that the avocado Nigiri looked very yummy and fresh for those of you veggie lovers. It was also slightly overpriced for being served in a food court.

I had this particular dish 5x throughout my trip in Sweden and this was by far the ultimate winner. Not only they were of small size but the taste was far from freshly made, more like fresh from the freezer. I even suspected that their shiumai were bought from those Asian markets in a packet of six. They looked and tasted the same: Small and rubbery. Only the fried wonton was bearable but that was because you couldn't go wrong with deep frying stuff, could you? I would not come here in the future. Best hold my hunger until I get back to Copenhagen, at least

Our choices for dinner (day before reservation) were seating at 6:15 or earlier or 9:15 or later so reservations well in advance are recommended. We started with cocktails (& they had a few creations) & had a "Buried in Sand" and a "Holy Mule-" Both excellent! Our server was helpful & made some wonderful suggestions once she found out it was our first visit. All the dishes (small & large) are great for sharing. As it seemed a staple of the menu (that changes daily) as well one of their specialties we decided to start with the Bastard Planka. A nice variety of house cured ham, salami, chorizo, pate & pickles-one of the best I've ever had. Also ordered the Klemmings Oysters as our second starter. So fresh, salty & exquisite! For main we ordered the Cod & the Munka Pork (as Pork is their specialty). Cod was cooked to perfection and the Pork had a crust that took it to another level. Both dishes were amazing! We finished with the Pistachio Ice Cream and Paris -Brest. Loved them both but the Paris-Brest is a must try! My only regret is not getting here sooner. Wonderful vibe with great service! They also have a bar area (open kitchen) where you can grab a seat to try some of the entrees or just have a cocktail, beer or glass of wine if they are fully booked. Will definitely be back. Michelin rating well deserved!
