Unfortunately, cleanliness became an immediate and serious concern. Even for a busy Friday night, the floors were visibly filthy and littered with food. More concerning, I observed roaches on the floor. When I brought it to the staff's attention, I was told it was "normal for this time of year." That response was completely unacceptable for a restaurant. At that point, I probably should have left, but since we were already seated, I decided to try the food. The salsa was downright disappointing, somewhat sour and easily among the worst I've had in Little Rock. One interesting touch: food is delivered by a robot. It was entertaining to watch and presumably helps reduce some of the server workload. That said, my drink still sat empty for much of the meal, which was frustrating. Cheese Dip -- $5.50 (small): Surprisingly good. It was creamy, thick, and flavorful. My only complaint is that I should have ordered the large. Quesa Birria Tripleta -- $17.95: This was difficult to rate because it was a mix of great, average, and disappointing elements. The tortillas were excellent crispy throughout, with the satisfying crunch birria should have. The meat was average and tasted good, though it needed more cheese. The consommé however, was the biggest miss: bland and flavorless. In a birria dish, the consommé should be a star, but this tasted more like plain soup. The rice was actually very good well-seasoned and perfectly cooked, with far more flavor than the consommé. Kids' Macaroni con Queso -- $6.25: It appeared to be Kraft Easy Mac, but honestly, that worked here. Our five-year-old ate every bite without complaint, which is a win for any restaurant serving a picky eater. Strawberry Razorback Margarita -- $9.00: Not much strawberry flavor, but it made up for that in strength. This was a generous pour; they definitely did not skimp on the alcohol. Our total for two adults and one child was $75. That feels steep, even today, for what was ultimately average Mexican food. I truly wanted to like Santo Coyote the cheese dip, rice, tortillas, and strong margarita showed potential, but the cleanliness issue and the staff's response to it overshadowed everything else. I can't recommend it based on that experience alone. Try at your own risk. Food is a 3.5/5 but I have to take the roaches into account so overall I'll give a 2/5.

Our server greeted us within two minutes of being seated, and our margaritas arrived in less than seven minutes. Service throughout the meal was friendly and prompt. The small margarita is one of the best values on the menu at just $4. It was decently strong without being overpowering, making it an easy recommendation if you're stopping in for drinks. We ordered the large cheese dip ($12.95), which came out quickly and piping hot. It was perfectly acceptable smooth, flavorful, and without any major flaws but it also wasn't memorable. At nearly $13, it feels overpriced for what you get. The fountain soda was $2.99, which is pretty standard these days. Unfortunately, like many restaurants I've visited in Little Rock, the soda tasted flat. The food took a little longer to arrive, but that's never a problem if it's fresh and worth the wait. Unfortunately, that's where everything fell apart. The Birria ($12.99) was a major disappointment and one of the weaker versions I've had. The Combo #2 (two enchiladas with rice and beans) was even worse. The enchiladas were cold, the food tasted stale, and the entire plate was underwhelming. This visit unfortunately reinforced what has become a frustrating trend for me. I've found it surprisingly difficult to find consistently good Mexican food in Little Rock, and Senior Tequila didn't change that impression. If you're looking for reasonably priced margaritas, quick service, and a clean restaurant, this place checks those boxes. But if you're coming for great Mexican food, I'd recommend looking elsewhere.
