Open daily from 8:00 a.m. to 3:00 p.m., Edith's offers a reasonably priced, home-style Mexican breakfast and lunch buffet. The restaurant also has locations in downtown Edinburg and in Mission, which reflects strong support and confidence from local customers. This was my first visit to Edith's. The exterior of the building appears recently updated, though parking can be limited during peak hours. Be aware that parking on the hotel side of the divider will result in towing. While signs are posted on the restaurant door, an additional sign on the divider itself would be helpful. Street parking is not available. I remember when this space housed a pancake-house-style diner, and much of the same furniture is still in use. Some booth upholstery shows wear and a few small tears, though the seating remains comfortable. The breakfast buffet features a wide variety of traditional Mexican favorites: several styles of scrambled eggs, beans with or without chorizo, fried potatoes prepared plain, with chorizo, or a la mexicana, chilaquiles, hash browns, huevos rancheros, cheese in salsa, menudo, oatmeal, fresh fruit, and more. Our server, Soraya, was especially friendly and took our drink order as well as requests for eggs cooked to order. Pancakes and waffles are also available upon request. My eggs arrived promptly and were cooked perfectly over medium. The iced tea is offered sweetened or unsweetened. Although I was told the sweet tea was freshly brewed, it did not taste fresh to me and had a hint of lime. Soraya kindly replaced it with unsweetened tea at no extra charge, which was clearly fresh brewed and excellent. Corn tortillas are warmed, while the flour tortillas are freshly made--definitely the better choice in my opinion. Overall, the food was very good. The guisos, potatoes, bacon, beans, and chilaquiles all had solid flavor without being greasy. The chilaquiles were slightly dry on their own, but adding queso in salsa verde made them just right. Some bacon pieces were less crispy than I prefer, though it was easy to select the more well-done pieces. I enjoyed my breakfast and would gladly return. I noticed that some reviewers complained about Christian music playing in the background, but during my visit the music remained subtle and did not interfere with conversation. Personally, I enjoyed it. I look forward to returning to try the lunch buffet, especially the chile rellenos--one of my favorites--along with the many other guisos they offer.

When you step out of your vehicle, in the parking lot, you're hit with a tidal wave of the smell of fresh corn tortillas! I knew I came to the right place. The inside has your typical South-of-the-Border flair; Saltillo tile, ceramic wall hangings, bright, colorful, and clean. The service is super friendly. I was seated right away and brought my iced tea quickly. I helped myself to the buffet. Some good choices; fideo con pollo, costillas de res, carné guisada, rice, beans and a few other things I didn't recognize (one was a spectacularly spicy meat and gravy dish I quite liked). They also had charro beans, caldos, an assortment of salsas. I was hoping for some kind of a "taco bar," because I was craving tacos. .... should've just ordered from their extensive menu. Overall, the food was good - nothing spectacular, but it was all well seasoned and hot. I was brought some fresh, house-made corn and flour tortillas so I was able to get my taco fix taken care of. All-in-all, not a bad lunch. I was back on the road in no time. I'd like to come back sometime and order off that menu.
