Let me tell you the drive was worth it, we have been searching for a good Texas style brisket and we think we just found our place. It is in the smiths parking lot but there is plenty of parking but just know that it is a food truck so w the Las Vegas heat wait in your car or find a shade because it's hot. First of love that they offer samples before you buy and uncle Bo's reasoning for that is he wants you to try the his food before you purchase it. Him and his wife are very welcoming and very nice and after chatting w him about his background we can see why the food that comes out that window is delicious. We ordered 1/2lb brisket, half rack Memphis ribs,1/2lb hot sausage links, side of jalapeño Mac n cheese, side of coleslaw and 2 root beers. The Texas style brisket is what we have been searching for after we visited Texas along time ago, no one has really came close in town here because u either get something too dry, bland, too smoky etc... but not uncle Bo's brisket. Hands down so juicy and moist and just the right amount of smoke 10/10 for sure we loved a fatty brisket instead of the leaner side w a good flavorful bark. The Memphis dry rub omg meat falls off the bone and that dry rub is so good it doesn't need bbq sauce at all but if you do his bbq sauce made from scratch is delicious! Even from a store bought expensive bbq sauce this one beats it for sure, The meats just melt in your mouth lik3 butter. He definitely knows what his doing back there and you can definitely tell he has been doing this for along time because he perfected it. Hot link sausage is also very good just a good amount of kick and it had a nice bite to it. Now the sides, one of the best coleslaw we have had no lies and the jalapeño bacon Mac is so creamy and delicious we devoured them sides in the parking lot. We also were able to try the potato salad they have and it's also very good.We still have so much meat to take home for dinner,The root beers also went so good w the bbq for sure. Spent over $60 and drove 43 mins out and it's so worth it, we will be back for sure! Good people and good food say less will be there to support, can't wait to try the chicken and pulled pork next time.

The sides (backed beans & jalapeño Mac & cheese) GONE! We got enough food for the 5 of us. We ate it all, even the picky kids. The brisket had a great peppery bark and was tender and moist. I didn't take any food pics, we were all too busy eating and enjoying. We talked to them for a bit when we were there. Uncle Bo KNOWS what he's doing. They were easy to talk to and very kind. Great people making Great food. You can't ask for anything more. So go get some and if you're going let me know ow. I'll get some too. LFG!!

I finally tried these guys. It was pretty wild…read more Meats Gone Wild is a food truck - well, more of a jumbo-sized trailer - that often makes appearances outside such Henderson businesses as Lovelady Brewing and Khoury's Fine WIne & Spirits. I've also been seeing them at the annual, free-admission Sunset Park'd lately, and I finally felt like shelling out the dough to try them today. They do usually offer simple hot dogs for the not-so-adventurous, but their signature items are a variety of "exotic" meats, i.e. the not-so-commonplace game and fowl meats. Their sausages ($10) tonight included alligator and python/rabbit, but I went for the elk w/ jalapeño and cheddar. I once tried an elk burger, just a few years ago actually, but it wasn't very impressive. It turns out that if you make it properly, it can pop with meaty, non-gamey, delicious flavor. The sausage had the right snap on its skin too. I didn't taste too much jalapeño or cheddar, but you really should be letting the meat stand on its own as much as possible anyway. The bun was plain but supported the meat sufficiently, and the raw diced red onion added nice texture and a complementary bite. I'll definitely have to pony up (not literally, as far as I know) for more offerings by Meats Gone Wild the next time I come across them. They are unique in the food truck landscape, if not the entire local restaurant realm - let me know if anybody else advertises a camel offering!

Horchata, Pepino y limon (Cucumber lime), Jamaica (Hibiscus). I got the pollo quesadilla and this was cooked to perfection, the pollo was seasoned and cooked beautifully. The salsa verde served on the side was the perfect balance of spice and sweet. Whatever cheese they used was sooo good you can literally see how beautifully it's melted in the quesadilla, I can say I haven't had a quesadilla this good and this big before!!! (P.s. you can also get a "quad-zilla" with all 4 meats combined!!)The tortilla they used was delicious as well. I live on the north side so I'm so glad I got to catch them at an event today but I hope to come back in the future because this was just tooo good!!! I had to end my meal with the best horchata I've EVER had and just look at how prettyyy she is I didn't want to finish it, I would order a gallon of this if I could LOL. Thank you for the amazing service and the feel good food y'all deserve all the love!!

Now, I I haven't bought too many tacos from food trucks, and that's something that I really need to fix in my life, but let me tell you, these were great! I personally would say these are a good deal. I'm a big eater and got five tacos for $20 and was full. They are bigger than street tacos though I still downed them in about 3 or 4 bites. They come with a nice mild green salsa and a spicier red one and plenty of limes for squeezing. The five tacos that I got were mahi-mahi, shrimp, al pastor, carne, asada, and carnitas. I'm honestly not sure which one was my favorite as they were all really tasty. I'm honestly just thinking about the next time I'll get them.

We don't normally go all-in on Philly cheesesteaks, but I already like them, and my husband finally gave in. I can honestly say I would travel for these because I've never had one this amazing! Let's start with the bread. It was fresh, delicious, and the perfect texture--not hard or crunchy, and it held together all the way to the last bite. The meat in both sandwiches was juicy, tender, and packed with flavor without being overloaded with salt. The onions and peppers were grilled to perfection, still having that slight crunch that made every bite even better. The cheese was melted right into everything as it was tossed together. But the big kicker was the homemade cheese sauce poured over the top. That sauce absolutely blew our minds! It took an already incredible sandwich to another level and made the entire thing mouthwatering from the first bite to the last. We paid $16 for a combo that included a drink and fresh fries. With a tip, it came out to about $20 per meal, which I'd consider average pricing--but the taste and quality were WAY above average. This is the real deal. If you love Philly cheesesteaks, you NEED to try this food truck. We will absolutely be back!

I love that it's local and family owned. When we got the food, the taco didn't last long, rip. It was so tasty! The meat was juicy, Mac salad was yummy! I liked that pairing. My favourite was the chicken skin nachos. Epically brilliant. Everything paired together nicely. I can see it was going to be a problem. And it was. I went back after being out of town, on a Tuesday for another order. The kids were there helping, they were sweet. I think it's awesome when kids help out and learn that kind of stuff early. If I get past the nachos and the taco I will try and report back about more. For now, those nachos and that taco!
