The Parisian mushroom soup with leeks was refined comfort perfectly seasoned with poivre . Lot (monkfish) served over a fennel, celery, fresh pea risotto garnished with cilantro and again the perfect amount of poivre. The graduating levels of texture from the celery to fennel to peas to risotto to fish was impressive. The cilantro was an unexpected bite of delight. Dessert was blackberry sorbet over pineapple carpaccio with a refreshing delicate lemon sauce. Chef Karl adds deft delicate touches of unexpected delight and detail to the classic fare. At the end of the night waiter came to the head of the table announced to everyone that he had made an error with the fois gras and the money would come out of his wages if we did not pay for 2 starters ( though ordered 1). I have NEVER been put in such an awkward position. The waiter also quietly notified 1 of our group that the chef was his brother. I felt totally manipulated /abused into paying a 2nd starter that was not ordered. I'm sorry that I paid it as in retrospect there is nothing that tells me that behaviors will change. The food was excellent and I feel sick to my stomach that I allowed myself be taken advantage of. Valerie

Don't let the €€€€ deter you; it's worth it. In addition to the cassoulet, I ordered the Corbière glass of red wine. Decent pairing with the cassoulet. There was a light course of croutons with olive tapenade. The cassoulet itself was great. Lots of interesting flavors and I love meat and beans in general. Service was courteous and efficient. Everyone spoke English quite well, which I appreciated. Bathrooms: Downstairs, a couple of stalls. Clean, beautiful, functional, and surprisingly spacious.

The front of the restaurant does not look as representative of the food and service inside. As you enter there is a wood fired pizza oven and a good-sized indoor seating area. We were seated outback in a very nice large patio. We all ordered salads as a starter. They were wonderful; the heirloom tomato's were outstanding. For main courses we had a selection of meat dishes and fish. All were very good. We did see some of the creations of the Pizza oven, and wished we had another opportunity for a meal at La Peniche.

Here in Carcassonne, however, this dish is very common, generous in portion, and inexpensive. Needless to say, I finally got my chance courtesy of this cozy bistro. I can't say I'm a cassoulet expert after one sitting, but this one seemed to check all the boxes for me. Lots of white beans, a whole sausage, large hunk of roast duck with crispy skin, well-seasoned....if cassoulet gets any better than this, I probably need to live in southern France. The stew came as part of a 13.50 euro menu that included a soup and dessert. The onion soup was decent, and the creme brulee was outstanding, with the nicely charred outer shell I love. We also had a mug of hot mulled wine, and a hot grog made with rum, lemon and tea. What an enjoyable outing, eating cassoulet and drinking mulled wine and grog on a chilly night in a castle town.
