I am not at all politically correct and made the comment that is exactly what it taste like and/or dirty socks. I asked if I could look at the distillery set up and was taken back in this little room where there was one vat about 6 feet in diameter with mash that had been there quite a while about half way down in the vat. Then I saw fungus growing on the inside all over. 3 or 4 inches wide. It did not even look like oak wood. more like spruce or a soft wood. Just plain NASTY. We had already bought a bottle. So we just left. First and last time here.

The lady working was kind and very informative and let us sample whatever we wanted. We ended up buying two bottles of moonshine ($33 each) and getting put on the waiting list for their smaller bottle of whiskey (large size $75 smaller $33). It was some of the smoothest moonshine I've ever had. Hardly any burn to it at all, I highly recommend you check it out and try their product yourself., You won't be disappointed. I'm happy to have such a wonderful business in Crestview!

Aside from the well lit patios, to the docks you can hang on over the water to enjoy the outdoor space, and the lively music, along with awesome staff, I don't think there is anything you can complain about coming here. From what I noticed, it seems as though this is a good local hang, lots of people appeared to know the staff and vice versa, making for a lively bunch. They got a great store of pretty much everything you can think of, wine (duh), food, clothing, accessories and more. My friends opted in for a wine tasting, which was extremely entertaining. I wasn't in the mood for wine, so I didn't do the tasting itself, but hung out in the corner while my friends enjoyed. I also found a beer outside, so was still able to toast them! There are lots and lots of options for wine to choose from, and they had this delicious cream cheese dip made with some preserves. I snatched a bottle of that to bring home and make meself. We had such a great time here. You can also feed the turtles that are in the pond as well, there were some pretty large ones out there!

We enjoyed the short trip from Crestview, down a winding tree lined road. BTW, Apple Maps does not send you to the right location, when you get to the "end" of Lake Ella Road, take a right and the Distillery is about 1-1.5 miles down on the right hand side....the big sign is easy to spot. We went into the tasting room after driving past some disc golf nets ($10 to play....looks like we'll be doing that soon!). The beautiful rustic building caught our eye as we pulled into the parking lot, and we saw the axe throwing area off to the side. Inside the tasting room, we met the owner who had just finished doing a tasting for the couple ahead of us. They grabbed stools for us and we were off on an educational sample tour of the different offerings of the Distillery. The owner is very knowledgeable about his craft, personable, and he didn't rush us as we chatted about the area, the notes we were tasting, and pairings and mixed drinks that could be made with each alcohol. The inside of the building is as beautiful as the outside, and we learned that it was built by the owners. It is a relaxed place to unwind and get started on the weekend. Typically the Distillery is open on Saturdays, from 11-4, and Black Friday was a special opening. The Distillery takes all forms of payment, including American Express, Visa, and Mastercard. Our receipt was emailed to me immediately upon our purchase. We bought a bottle of Timber Creek Florida Apple Pie, and Timber Creek Florida Gin. And we bought a token for a wood fired pizza. There are plenty of others that we will be buying in the future! After purchasing the 750 mL bottles, my husband decided to try the hand mixed drinks the owner creates and serves on tap. First he tried the Strawberry Rhubarb Lemonade made with Timber Creek Florida Vodka, then he ordered the Timber Creek Tiki, which is Timber Creek Florida Rum, pineapple and jalapeño. The mixed drink menu changes periodically, but both had such a good flavor that it bodes well for all other mixed drinks too. Outside while we waited for our wood fired pizza, we used the corn hole games that were set up. It was so quiet out there! While it felt rural, we knew that we were only about 15 minutes from Crestview, so it was a relaxing getaway for the afternoon. Our wood fired pizza had a choice of toppings. Today there was pepperoni, pulled pork, onions, homemade tomato sauce and mozzarella. The staff member who was baking the pizza told us about how they make the crust on site, and she explained about the handcrafted pizza oven and the varying temperatures. She also mentioned that they have pizza making classes, so we look forward to signing up for that event in the future. Speaking of events, almost every weekend they host different events that you can sign up for on their website. There's lots of variety and would be great for a date night or for a group of friends to go and relax. There are comedy nights, distillery tours, special food events, and more....but even if you're not signed up for an event, you should still go on a Saturday to check them out! Definitely a highlight of Crestview!

The owner of the distillery works alongside his son to run the place, which is very cool and admirable. We came in just about an hour before close, and were excited to do a tasting. Not having done a ton of research before arriving, I was pleasantly surprised by the amount of offerings they had. There were several types of rums, ranging from light to dark, accompanied with a vodka and whiskey. Patrick was great at telling us the history of how they came to this place, but also the history of rums, and the legalities of what it took to get to where they are today, to be able to open and run a distillery. He was full of lots of history, which made the tasting interactive and educational. Great stop along the way. If you like rum, you will not be disappointed!

We came in about an hour before closing, and Patrick was still happy to give us a tasting with quite a bit of history to go with it! The tasting room is a tiny office space next to the distillery area. We didn't get a chance for a tour as our timing was close to end of day for them, and it was just Patrick on site at the time. The parking lot has plenty of space available. Easy enough to get in and out of. Patrick chatted us up about their products, and history. And just general knowledge of the spiritsnane the history of how some of these items came to be, and their background in the industry. I learned a lot of cool bits of knowledge. One of the things that struck me about the distillery during our research phase of the trip was the artwork on the bottles. Turns out that his son, who is also running the business with Patrick, is the artist! The bottles look so cool, enjoy the pictures! The tasting was very good! We had quite a variety of sips to taste and compare. Basically lightest to heaviest. We ended up walking away with Rock'n Rum, and Spiced Rum (for winter drinks).
