Don't hesitate for a second if you're thinking of booking Dylan for a private event. My family of 8 (+ 3 kids) wanted to celebrate my parents' 50th anniversary in a special way. Dylan customized our menu based on my family's preferences for fresh, clean naturally flavorful dishes and he delivered an epic 5-course dinner that tasted as incredible as it looked. Truly fine dining in the comfort of our Airbnb home. I also appreciated how laid back and flexible Dylan was the entire time - he's a true professional and rolled with the punches. His 2nd chef couldn't make it last minute but Dylan made sure this didn't affect our experience by shopping for half of his ingredients and swinging by to check out our kitchen the day before so that he could maximize his time the day of. The presentation of each course was also perfectly timed, allowing for room to breathe in between and each new course was brought to us hot and fresh off the stove. (Anyone who's hosted Thanksgiving dinner will know it's not easy to time the cooking of multiple dishes at once - I've tried and failed ). Additional bonuses that were meaningful to me: All produce was organic, and the seafood/meat was purchased fresh the day of from Whole Foods (tender grass fed rack of lamb, melt in your mouth sea bass, and truly the biggest scallops I've ever tasted). Dylan prepared my family's feast of the seven fishes two years in a row and knocked it out of the park! Not only did I task him with cooking seven fishes plus sides and appetizers for over 25 people, (which is enough to scare anyone away) but he handled all the shopping, prep work and clean up like a pro! I honestly do not even know where to start. Dylan is so easy to work with, he went above and beyond to make our event truly amazing. Everything he made was outstanding and all of our guests raved about him all night. I will dream about those short ribs for eternity! Wish we already had another event we could book him for! We hired Dylan for an off site corporate retreat at a private residence for a group of 10. He handled breakfast, lunch and dinner. The food was amazing. Dylan was extremely professional and has a lovely low key demeanor. We had one co-worker who's family and 3 young children also joined us and Dylan was beyond accommodating. He was working in the kitchen constantly adjacent to our meeting, working his tail off the entire time, however we barely knew he was there. His meal prep, presentation, timing, etc. is top notch. Beware! I never got to experience Dylan's. food because he lead me to believe he was cooking for a dinner party and backed out a week before. After 3 weeks of back and forth( VM, email & text) he tells me a week before he is booked already on my date! We wanted to something really special for my mother in law's 80th birthday. After searching for personal chefs in the area of Atlantic City, Dinner by Dylan was the chef that we chose. Dylan was very responsive in planning and was able to help me create a menu that included all of my MIL's favorites. The food was outstanding - the bruschetta was some of the best we have ever had, the crudite dip was awesome and the mozzarella balls were fantastic!! That was all before dinner!! We loved the Italian Wedding Soup and the Chicken Parm was cooked perfectly!! Make sure you block out the time as this is an experience that you will not want to rush through. Dylan was personable and friendly; willing to answer questions. He was comfortable with us watching but was independent when we were having family time.
