I thought it was pretty amazing until I found Frederic Cassel. Yes, Cassel is better than LaDuree. The macaroons and desserts seems a little fresher and a little less dry.. and it seems like less of a "dessert factory" where Cassel puts more into each thing that he makes. He even took one of my classmates under his wing as an apprentice because she showed such an interested in chocolate! I was super lucky that this place was in Fontainebleau, where my school was located. There really isn't much at all in Fonty, as we call it, but this little gem more than makes up for that.

We purchased an entire loaf of bread that was filled with ham and cheese. It was warm, gooey and only 3 euros! We walked in and were taken care of right away. Sorry we came to give you money and appreciate your products. The cappuccino was the worst cappuccino I've ever paid for in my life. I know it may sound like an exaggeration, but it was truly terrible. It was straight out of a cheap machine and served with nothing: no spoon, no sugar in a small paper cup. I couldn't taste the coffee and I had to beg for some sugar. They gave us one tiny sugar package each, I guess they were trying to save sugar for the pastries. Stick to the pastries, pass on the coffee. We threw away the two "cappuccinos". I'd still go just for their extremely good pastries and ignore the poorly trained staff.

Sometime it has chocolate filling. Sometime it's some kind of berries filling. I love them all. If you like baguette, they offer the traditional one as well. I got a few pastries and it was still early enough that they were still warm! The Croissant was probably the best I had on this trip. It helped that the Croissant was fresh and warm, but it was also crispy on the outside and buttery & flaky on the inside. The Pain au Chocolat was also great but it could have used more chocolate for my liking. The Chausson aux Pommes was sweet, slightly acidic from the apples, and definitely heavier of the pastries. I've also never had fresh madeleines before and knew this would be the place to try them. The Madeleine Glacée were buttery and lightly sweet; these actually go so well with a cup of coffee or just a bite if you need a quick snack. All in all, great try!
