I had to ask how they were doing it, and Mark was more than happy to walk me through his process. When brisket is smoked low and slow -- and they smoke theirs for 20 hours -- here's what happens: * The visible fat cap mostly renders down. * The intramuscular fat melts. * Collagen breaks down into gelatin. * The melted fat soaks deep into the meat fibers. So by the time it hits your plate? You don't see fat. You taste rendered fat and gelatin inside the meat. For $14 all-you-can-eat lunch, I kept waiting for the catch. There isn't one. I probably ate close to a pound and a half of brisket myself and still wanted more. And there was no "cocktail sauce" no "tartar sauce", not even ketchup for the potato component. The food was hot though! Our expectations were not too high. But serving all the food items ordered and paid for by a customer is apparently not in the bag of tricks at this restaurant.
