I've been to Dagu Rice Noodle a few times now since they first opened. Generally, I like the restaurant's decor and setup. They offer somewhat authentic (Yunan-styled) rice noodles with really good soup, such as pork bone soup rice noodles. The highlight for me is the unlimited refills on the noodles. I recommend asking for a refill ASAP (i.e. ask for a 2nd bowl of noodles when the first one comes) so that the soup is still warm when the refills arrive. Dagu Rice Noodle is a noodle soup restaurant chain that was founded in 2010 in Shanghai, China. Today they have locations all over China, in the USA, and in Canada. One of these locations can be found right here in Downtown Edmonton. In all honestly, the concept of this restaurant was a little bit over my head. I'm very familiar with noodle soups such as ramen and pho but this rice noodle soup was a whole new experience for me. I credit the Edmonton Food Faves We Crave 2022 list for naming Dagu as their Favourite Soup, which put this new-to-me restaurant experience on my radar. I visited on a Saturday evening and I had made a reservation in advance because I wasn't sure how busy they tend to get. It turned out that the reservation probably wasn't necessary, however the restaurant was consistently bustling with customers. The location itself is right on Jasper Ave, right in the heart of the city. From the outside the restaurant doesn't look like much but once inside, you are met with a large open space and towering ceilings. The room is bright and airy and I especially loved the unique mural artwork on the walls. Light planks of wood encase really cool drawings of the noodle making process and on another wall you'll see huge full-colour images of the soups that they serve. The dining room feels fresh and modern, yet approachable. Our server was friendly and happy to answer any of our questions (of which I thought I had many, but the experience turned out to be less scary than I thought). There is an entire menu page (two sides) dedicated to the drinks alone, most of them being bubble tea. And there are dozens of choices; from fruit tea, milk tea, cheese drinks, coconut drinks, yogurt drinks, panna cotta drinks, something called Yakult, fresh milk drinks, smoothies & frappes, Oreo drinks, mochi drinks, coffee, plus alcoholic beverages. It's A LOT. I liked the use of emojis on the menu to help with some guidance. I tried to stay close to what I already enjoy and decided to look within the Milk Tea section. The Hokkaido Milk Tea ($6.99) seemed like a solid option and I also added Tapioca ($0.99). There are plenty of other add-ons that you can do but I felt that having the tapioca was the most important component. At first the server said that they were all out of tapioca. But then she said that they were making more and that it would take 10-20 minutes. I was happy to wait. It didn't seem to take too long and soon enough I had a bubble tea in hand. I enjoyed the drink a lot - what's not to like? The milk tea reminded me of the stuff that you get in cans from vending machines on the streets of Japan and the tapioca (worth the wait!) was sweet and delicious. At this point there are tons of bubble tea shops in the city and I wouldn't say that this one stood out above the rest. However, I did enjoy that it was a part of our overall dining experience. Bubble tea is just fun. The appetizer section of the menu is also very extensive and I could certainly imagine the social aspect of ordering a whole bunch of different dishes and sharing with a group. I had heard good things about the Salty Crispy Chicken ($8.99 for regular) and looked forward to trying it. Many of the appetizers come in regular or large sizes, which is useful if you are scaling up or down depending on the size of your group. The morsels of extra crispy chicken were easy to eat and addictively salty. My only issue is that the pieces were very small. There was no point where I had a nice juicy bite of chicken, only crunchy small bits. The flavour was good but I would have been happier with a bit more substance. I would probably try the spicy quail eggs next time! The main event is the rice noodle soups. Served very hot, with unlimited noodle refills, and made with no MSG, I was ready to try a whole new thing! My first thought was about vermicelli noodles, which are also made from rice. However, the noodles at Dagu are not the same at all. Vermicelli are often flat and are usually very thin. These rice noodles are a lot thicker, more like a Shanghai noodle, which makes sense because that's where this restaurant is from. In a soup however, this noodle becomes pretty soft and slippery, kind of like the noodles in a classic bowl of chicken noodle soup. There are lots of choices and I had to go for the Crossing Bridge Rice Noodle Soup because I'd heard the most about it. A style of soup from Yunnan province, this dish is named for its deconstructed nature. I picked the Sour & Spicy with Beef Slices (Ham, fish tofu, ground pork, quail egg, crab stick, lettuce, bamboo, black fungus, corn, and sour cabbage - $14.99) and I added Shrimp ($2.99). The first part to arrive was all of the toppings plus a bowl of noodles. The "deconstructed" concept felt like a lot of fun and turned the meal into a whole activity. The Sour & Spicy Flavored Crossing the Bridge Rice Noodle Soup with Beef Slices was presented in a deconstructed manner. First we were given the bowl of noodles, followed by the key ingredients (beef, imitation crab, corn, seasonings etc.). Next, I added all the ingredients into a large bowl of bubbling broth. There was enough soup for my husband and I to share. The soup had the tastiest combination of sour and spicy. I wasn't sure what to expect but I was pleasantly surprised! Thanks to fellow Yelp Elite Rose W. for suggesting this soup in her review! My husband also ordered a few different types of skewers. We tried lamb, beef, tofu and even chicken (wings and drums) skewers. These were all well seasoned and very tasty. I truly enjoyed everything I ate. Finally, I ordered a Taro Boba Milk Tea to go. Honestly this tea was different from other milk teas I've had. It wasn't too sweet. The boba had a nice chew to it. I could taste real taro. So yummy! I can't wait to try the other flavours! More real China experience than you have any right to expect. Big fun for spicy treats (with some serious schezuan peppercorns) and tea (or beer). Not everything may please the Western palate, but worth the adventure. Recommend the chicken skewers. The sticky rice skewers also seemed to go over well. This is the latest rice noodle chain to arrive in Edmonton this year. Inside is modern and bright. The service is friendly and knowledgeable. Also who doesn't love unlimited noodle refills?! I've been here three times now and food has been great for me each time. To order, you have to fill out a sheet of paper to pick which items you want. I highly recommend the items on the bottom of the menu with "crossing the bridge" in its name. This means that all the items for the soup will be given to you in a tray and you can put the items in yourself. The top portion of the menu has the soups prepared with the items dumped in already. However I feel like it's more fun and I think there's more soup items provided if you choose a crossing the bridge soup option. My favorite soup so far is the spicy and sour soup with beef. I love the flavor and it's mixed with the perfect spices to make you want to crave for more. Also the bubble tea options here are fantastic. I rank it high in the bubble tea places in the city. The fruits in the bubble tea are fresh and the size of the drink is decent. The price of the buuble tea and the noodle soups are reasonable. Really amazing place. Food was fast and tasty. Really filling and super healthy. I had the Spicy Crossing the Bridge Rice Noodle Soup. It was great. Although I am the one that usually does extra extra hot sauce on everything, I found this too spicy. I love how the soup comes deconstructed. You can add veggies and meat to your liking, and each bite is a different tasty sensation. I decided to be adventurous and tried the sliced beef tongue. It was really spicy. I was surprised on how tender the tongue tasted. It was a lovely combination of crunchy vegetables and tender meat. We also had the fried chicken. The chicken was moist and tender and a nice batter on the chicken. I also had the strawberry panna cotta drink. How delicious! It made the prefect rich dessert. I highly recommend this place. My only critique is that it is not a super comfortable restaurant to sit and chat in. The atmosphere and the chairs are uncomfotable. read more

So I came here for the very first time recently as part of Downtown Dining Week 2023, in part as pictures of their "crossing the bridge" soup ingredients were featured on Downtown Dining Week ads. The restaurant inside is bright and clean and we were seated immediately for lunch. They had their regular menus and Downtown Dining Week menus already on the table though we knew we wanted to try their Downtown Dining Week lunch special which included a tomato based soup (which was amazing! I had never had this style of Chinese soup before and was certainly wowed and also over full after!) along with a super fruit tea (which was outstanding in and of itself as it felt like the tea included an entire fruit salad in my cup!). Service was polite and quick and able to deliver things like extra utensils to the table when requested. I would very much love to try some of the other soups on the menu now... and I didn't know that you could get noodle refills (thanks to another review that tells me this and makes me want to return for that alone!). I loved the fact that I got to assemble my own soup. I'll definitely recommend this place to others and try to come back again in the future! read more

Love the hot soups! Especially the beef in bone soup! It was boiling hot and had alot of meat on the bones. Also has a taste of the shrimp noodle bowl (currently labelled as the 'Fresh Rice Line'). The broth was definately more rich in flavour due to the added seafood flavour to the base broth. So if you like your broths more flavorful, get that. Although I knew there were unlimited noodles, 1 bowl of noodles left me super full! The Lotus root stuffed rice is sweet, mushy and cold. The taste was ok, but I didn't like the texture. And I mean hot, the bowl comes sizzling to your table. I had the sour & spicy flavoured noodle soup with XiangXi pulled beef. It was such a great blend of flavours. The tender beef mixed with the sweetness of the vegetables helped the rice noodles suck up all that flavour. And the noodles were refillable which is a win in my books. We went there for lunch. You have to filled in the paper yourself to order the food. The menu was not clear, so we asked a waiter for help. I mentioned to the waiter that I didn't want add on and told him I wanted beef which came with the noodles. The signature noodle was just a clear soup with a big bone, maybe.. a little bit lettuce. Nothing like the picture. I asked the waiter where was the beef. He told me that there was no beef. The other three bowls of noodles were all have meat in soup. We were very surprised. But i didn't think of they were add on because i mentioned that to the waiter at the beginning. There were lamb inside the soup which my wife couldn't eat it. The soup were tasteless anyway. We didn't complained, We finished them anyway, just decided won't come back that's all. Check came, I was charged add on for all bowls of noodles. Then we realized the meat came with soup were add on. But ...then, where was mine? Mine was no meat at all. We asked the waiter about it but a waitress came and said I filled the paper. I told her the paper was not clear that I asked the waiter for help to finished it. The waitress kept defending the menu said add on meat usually came with lamb, beef. Why didn't the waiter told us and the menu said nothing about it. I was so angry. She didn't even show any apology. I love noodles so of course I had to try this place as soon as I found out. I liked the over all atmosphere of this place, clean and simple with light colour decors. I tried the spicy and sour soup with rice noodles the first time and spicy soup with rice noodles for the second, third, and fourth time. Needless to say, I like this place. The spicy soup reminds a lot of the spicy soup base at hot pot, which is also my favourite. By the way, their noodles is unlimited, you just have to ask for more.
