To explain, the ribs were excellent. They were tender, flavorful, and had a ton of meat on the bones. In similar fashion, the brisket was pretty tasty. To breakdown, the brisket had nice flavor with a good amount of fat around the edges. However, the middle of the brisket was a bit overcooked. It was still enjoyable though. After that, I tried the fried pickles which were delicious. The pickles were crispy with a savory and salty taste. These were simply great fried pickles. As a final point, Signal 30 is a really good BBQ restaurant and I highly recommend the ribs and fried pickles.

They were certainly fine, but I'll explore other sides on future visits like the cole slaw and the pickled radishes. The price for a combo, $13.99 plus tax and tip extra... well ... since I'm really here for the chicken, maybe next time I'll just order a big batch of wings and do something else instead of (the starchy) sides. Running errands in this area and dropped in to try Memphis King's (1st time visit) I always get the same wings (hot buffalo) at each restaurant/bar to keep things fair. Memphis King's wings are smoked, then fried. I've found that you lose a lot of smoke flavor when they're fried to order but these had just the right amount still present. Very tasty. And crispy! (a lot of smoked wings are grilled but, while delicious, it doesn't render enough of the skin to make them crispy and I like crisp!) I've sampled wings from about 30 places (so far) and I would whole heartedly put Memphis King's in my top 10 for sure. Looking forward to trying their other items because their burnt ends look great. As does the house made pastrami *droooool* As for the people, the gal in front of house was wonderful. And the chef (not sure if he was the owner or not) was so nice. The beans with burnt ends were very good. The coleslaw was also well done - not too wet nor too vinegary. If you are a light eater this is easily enough for 2 meals. I am giving them 3 stars based on my country wide scale (includes TX) but I'd likely give then 4 stars if limited to this area. Only real pain point is the price. But that is just the way things are these days.
