He was able to fit me in on my lunch hour, doing the work quickly and professionally. I even got a good recommendation for a neighborhood restaurant for lunch while he did the work. When I picked it up, he explained about the work, and how to care for it. He even applied a conditioner to the untreated leather cover for the head and explained about its care to keep the leather in the best condition even when it needs to be used out in the weather. He spoke about being a swordsmith and offered to make me a custom two-handled sword! I had purchased a knife set about two years ago and unfortunately hadn't made much use of the yanagiba in the set due to its supposed 13" length; typically used for cutting up entire fish rather than just pieces of it. I've used it maybe twice to cut prime rib and that was pretty much it. Other than that, it sat in a box. While exploring knife sharpening places, I also decided to gamble on whether I could get this knife cut to a length that was more standard for sashimi, poke, or even steak usage so I messaged Christopher through Yelp, got a quote, and dropped off my knife two days later. Today (five days after dropoff), I got it back and I'm happy to announce that the knife came out pretty good, close to what I had imagined. The original curvature of the blade is still intact and the top was shaped and brought down. Would I have preferred maybe the bottom being brought upwards to also preserve the natural bevel and tip design of the knife? Yeah, sure. Looks a little odd, but I think it'll work how it is intended which is kind of the point. I think I can also acknowledge the level of work it would've taken to do it the way I wanted might've also just cost so much that I would've been better off buying a new knife and therefore, no stars docked. Overall, pretty good I would say. Feels even sharper than when I dropped it off and this was essentially a "new" knife as it was, but I can tell Chris had sharpened it with noticeable improvement. Pretty reasonable turnaround time, good pricing, and it just FEELS smoothly polished. Fantastic. Edit: I've already used it tonight and wow, it's sharper than anything I have in the drawer right now. Greywolf was really responsive when I submitted a quote inquiry through Yelp and when I called to make an appointment. He happened to be in the shop so I stopped by shortly after calling. Prices are by blade length and he also sharpens serrated knives and scissors in addition to regular knives. From the reviews, it seems like he may also be able to sharpen garden shears. You can try to find street parking but I would recommend just parking in the McCully Times parking lot towards the Young Street/mauka side. Then you just walk across Young Street, turn right, walk past a few houses, and look for the tin shack. The door (also made of tin) is behind the mail boxes and isn't clearly marked. I couldn't tell that it was a door at first but I just knocked and he came out (plus he was expecting me anyway). Greywolf is very friendly and sharpened my five knives (varying between 4" - 7.5") within 10 minutes or so. You could browse Times while you wait but I chose to just sit in a shady area nearby since it was a nice, breezy day (: The price was very reasonable, though he does take cash only. He also informed me that he leads a Mongolian martial arts reenactment group called "Khanate of the Golden Horde". If you search that name including "Honolulu", a Honolulu Magazine article will pop up describing the group and how often they meet. Greywolf told me he also lived in Mongolia for many years. You have to make an appointment to meet up with him, Make sure to ask him for directions to get to his location as parking will be an issue. I brought in my companions cleaver that her father used and left to rust in the drawer. I asked if he could do anything to make it look better. You gotta see what he did. It's pictured rust to voila! It's that time of year, so I made an appointment with Wolf of Cutting Edge Sharpening to get my knives in tip top shape for the New Year. Wolf's in a temporary location, co-located with Sako Electric on 297 Puuhale Road in Kalihi. Turns out he had other things besides Covid to worry about this year. The shed he worked in burned down earlier this year. He'll be moving back to his original location in McCully sometime in February 2020. Did you know that you can get a sword made in Honolulu? Made ya look! It's true...but that's not what I called Wolf at Cutting Edge for yesterday. I had a ceramic knife that has been in need of sharpening, and also a pair of pinking shears that were my Mom's...and probably older than I am (which is oooollllddd), that I had busted out to use and realized the needed help very badly. I called to see if Cutting Edge is open because during the Covid shutdowns, I always call ahead. Wolf could not have been nicer, letting me know what time he'd be available and that yes, he could look at the pinking shears, too--I already knew he did ceramic knives from other reviews on here. He asked me to bring in some fabric scraps that I typically would be cutting, so we could test out the shears. Unfortunately, there was a fire at Cutting Edge shop, so Wolf is working out of a friend's shop on Puuloa Street in Kalihi. Parking is tough, but if you call ahead, he will tell you when to come in, and then tell you what to do. Anyway, like I said, Wolf is super nice, very knowledgeable of his trade, and yes, he is also a trained sword maker, so if that's what you want, you ought to give him a try. The guy couldn't be any nicer!! A couple things I learned from him yesterday: 1) Knives should be sharpened about every 6 months--and everyone tells him that they've not sharpened their knives in AGES 2) Cutco knives--you know, those expensive ones you usually buy from a college student that cost a ton and "never need sharpening" DO need sharpening. I saw one there and asked about it 3) Professional knife sharpening doesn't really cost all that much, and Wolf is really fast!! If you're doing a lot more home cooking, or mask sewing nowadays, bust out the dull knives & scissors. Sharp knives are safer than dull ones, and if you've got good sewing scissors, you know how important it is to keep them sharp. I'm pretty sure that like all local small businesses, Wolf could use the business, especially since he's had to relocate for a bit. I'm also pretty sure he could tell some really good stories, too based on what he told me about sword-making. Give him a call! read more

He ended doing it in about 5 minutes for two knives. He knows where the groves are for the knives and is very nice. He charges a dollar per inch, but for pocket knives I think he said that it cost 5 per knife. That is simply because they are smaller so they require more precision. Honestly, knife sharpening isn't something I know anything about. But since I got tasked with the job, thanks to my dear husband, I figured it was time to learn something about how, where and what to do with a dull knife! First time I used Yelp's request quote online and within an hour I received a quote back! It was basic, helpful information, with a good location so I decided to go with Wolf, the owner and operator. I text Wolf back at the number he provided asking if I could bring it in the next day and time. I figured it might take a while, not knowing if he had other work lined up so I was prepared to leave it and come back and pick it up. Wolf immediately recognized what type of knife it was, stated what he was going to do and would be back in less than 5 minutes! Wolf did a great job at sharpening my husband's knives and restoring the wood handles. I wish I took a before picture. Basically the wood handle was splitting and loose so it was difficult to grip the knife while using. He repaired it and polished it up. It feels like a brand new and cuts everything like butter.
