Afghans, like Iranians, are known for exceptional rice cooking. Afghan rice pudding is better than rice pudding rice pudding. I share James Beard's assessment entirely. This Afghan rice pudding is nothing like the flavorless grainy custards of my youth. The pudding is mild, but it is quintessential comfort food.
