Got two beef empanadas and a chicken bowl. The empanadas are big and have an amazingly light and crispy texture. Without much content aside from the beef itself, it's surprisingly tasty and the umami is controlled nicely. For the chicken bowl, the chicken is in huge chunks of legit chicken breast, soft and not too dry. The pico de gallo offers the ideal contrast, and the yellow rice is exquisite. The cilantro sauce is also perfect on everything for extra zest and not just because cilantro is one of my favorite things, and I can straight up eat cilantro like a snack. The only thing I'm not sure about is the plantains in the rice bowl. The plantains themselves are fine, but I kinda feel like it doesn't belong and clashes with the rest of the bowl. Food truck came to our neighborhood food truck friday event. Nice people and fast friendly service. The cuban sandwich had a lot of pulled pork and the sandwich was large. It was served on a bed of potato sticks. Excellent sandwich!!! The pork tacos came in order of three and served in a container with three compartments that keep them upright and keeps toppings from falling out. Lots of shredded pork and excellent flavor. Definitely must try these. The entire menu looked great. You can order online ahead and have it ready for pick up. Having never heard of Copper Spoon I wasn't sure what to order but once I saw the menu I ended up going a little over board. As a big fan of Cuban Food I had to try a little bit of everything... So I did. We ordered the Cuban Sandwich, 2 Ham Croquettes (I believe at a $1.50 each) , and not 1 not 2 but 3 different empanadas. (went with beef, chicken, and guava and cheese. To start off the Cuban Sandwich was huge and stuffed with ham, cheese and pulled pork. It even has a bunch of potato sticks under it too. It was very good and so filling. I had to eat the other half for lunch the next day. The Ham Croquettes were also very good and you could tell that they had been made fresh too. For the empandas my favorite would have to be the beef. It was stuffed with seasoned and juicy beef down to the last bite. The chicken one was a little bit more on the dry side but when dipped in their sauce it was much better. The Guava and Cheese empanada was good too but I have to stick with the beef since I enjoy savory over sweet. I love my food truck Wednesdays at my complex! I especially love trying new to me food truck and Copper Spoon did not disappoint! I took a minute to look at the menu and then looked at the display case windows- great idea! I love when you can see what you are getting! I ordered a chicken empanada and their macaroni bowl- 5 cheeses, macaroni, chunks of meat tossed in a marinara sauce. The gentleman behind the counter offered a sample of the pasta first- um, yes please- I want it! It was served in a taco-style bowl, different- but very good. I took everything back to my place and dug into the pasta and was full within in a few bites. I was determined to try the empanada- I tore open the corner and savored the golden pastry and shredded chicken- so flavorful! My other half LOVES empanadas- so I hopped in the car (as it was starting to storm) and drove to his work to surprise him! It was gone in 60 seconds~ lol. Well, maybe 2 minutes- but he was food moaning with every bite! WIN! Ironically enough- he and his co-worker were talking about empanadas 10 minutes before I showed up... ask and you shall receive, my witchy powers were working! Not even worth it .. $11.99 for yellow rice and chicken was not even enough for my 5 year old grandkid what a rip off this was what was in the bowl dried Yellow rice , died chicken.. the amount of food was not enough but if at least it would of been somewhat good the amount would of been ok they were at a park at Pablo Creek reserve I had my grandkids with me !! they were looking forward to it .. got choked on it because it was so dry So about $30.00 later with A five dollar tip .. hungry tired kids .. read more

This food trucks is the open and clean that I have seen. The people inside are kind. Ok so the food! The Cuban sandwich I get every time ugh with the potato sticks! I haven't had those since I was a kid! Ok so the sandwich is huge, you could make it into two meals but it is so good you will keep eating even though you are about to burst! So I love desserts. The flan is right on and good but my new favorite is the tres leches. I can usually do milk but mind over matter and I will get it again. read more

Delicious! The empanadas are fantastic. I had the beef one and it was very moist within with crispy edges. The plantains are as they should be expected. They did not disappoint. I also had a Cuban sandwich. It is actually on real Cuban bread making it a truly authentic sandwich. It is a fairly big serving of sandwich served on top of potato sticks for a very fair price. honestly, the food was awful. i wanted mac and cheese but what i got was a slimy cold mess and the portion wasn't even big for the money i paid. waste of money ($10 for a small mac and cheese portion that wasn't even heated up) the dish also had ham in it which was not stated on their menu when i ordered it. second of all, my friend ordered chicken tacos and the tacos were cold and the chicken was grey. would not recommend. read more
