I settled on stacked enchiladas with rice and beans. What could go wrong with a standard item in New Mexican restaurants, right? It turns out that while the red chile was plenty spicy, the plate had been microwaved with the shredded beef burnt and the melted cheese around the edges of the plate burned as well. I have a policy not to send anything back as it invites a loogie, but I also have the policy of crossing an offending establishment off my list of dining possibilities.
