How in the world have I missed this Memphis gem until now? I've driven by here at least six thousand times. I am not even sure what to say about this gross oversight as a Memphian. This place felt so at home to me, like a page from my adolescent and teenage years. My family had a house around the corner on Kimball back in the day. I went to Evan's, Sherwood, and Sheffield before I graduated from Wooddale. I loved every single thing about this place. It may not feel the same to some, but this place is beyond beautiful. All of it... screams Memphis! The people who work here and/or own it are wonderful. That isn't lip service in any way. I have not had anyone that was that concerned about my comfort, potential needs, quality of food, follow up for later needs, and just over the top service, ever, in my entire life outside of $$$$ fine dining. The wings were killer. Perfectly crispy, sized right, cooked well, and the sauce was thick, rich, and deep. You can tell that this no bullshit bottled sauces. The crinkle cut fries were cooked to perfection and seasoned with peace, love, and goodness. My goodness. All of the food was served too hot to even pick it up. Perfect. Love it. Love it. Love it. I ordered extra for later (always a pro move) and Mr. Williams darted across the room to get the door, then take may take out bag all the way across the parking lot to my car out of sheer kindness. I used to frequent Ching's when I was in school at UofM. I stopped going after I graduated and let a few years pass. I went back again the other day for the first time in a while and noticed that quite a bit has changed. They've expanded and updated some things. They've also updated their menu. The prices have gone up from what I remember and they've added a few new items. It was still just as busy as it used to be when I'd go years ago, so I'm glad I thought to call in my order. Nice to know they're still getting good business. The food overall is pretty good. This last time I got the 9 piece combo and added a side of onion rings. The seasoning they use on the fries and onion rings is SO GOOD! Just like I remember. I got honey hot and extra hot wings(half/half) sprinkled with lemon pepper. Nice and flavorful! So I always loved chings but haven't had them in a few years I decided to pay them a visit. Completed an online order and had a friend to pick it up for me. When I got my food it looked really good however the taste and overall quality was not how I remember it I did place my order during lunch so they might've been overloaded with orders. Not sure but I ordered 10pc part wing combo lemon pepper paid for extra lemon pepper seasoning and hot drizzle with cheese fries and a lemonade. The fries were good and of course so was my drink however I could tell that my wings had little to no seasoning. While they were fried to my liking, and the heat was delightful, the flavor was disappointing. It is a chili powder-based sauce, not mixed well - you could feel the grit. Chili powder isn't my preferred taste and in my experience isn't high on the list for other wing lovers. There are plenty of other locations with more inventive and delicious sauces. I suspect the high ratings are due to its close proximity to a college. If you're looking for some more, um - sophisticated - taste, try another place. So I went here thinking this was a Chinese owned place. It's not. Googling the history, apparently the owner's mother, who instilled their passion of cooking, was nicknamed "Ching" in high school for her Asian-like features. I guess we have something in common, since my nickname in high school as an Asian growing up in America in the 80's was "Ching-Chong". The staff was very nice. Lots of memorabilia on the walls along with TVs. They had plenty of sanitizer and the tables were clean. We came around 1:45 pm on a weekday. It wasn't packed but there a constant flow of customers coming in throughout our stay. Most had preordered which I think is a must here, unless you're just hanging out, because it took about 45 minutes to get our food even when it wasn't crowded and really busy. They had several hiring signs so maybe they need help. Indicative of the times. So just gotta be patient. We tried the honey gold wings and my kid had the tenders. She told me "daddy, it was worth the wait". Well if the kiddo likes it, I like it. And actually I did like it. The cashier had said the honey gold sauce was not spicy but it actually has a little kick. So I'm glad I just got plain tenders for my kid. The prices aren't cheap but I think wings in general have skyrocketed lately. I don't understand why but it is what it is. The parking can be tight even when we went. Oh, my beloved Ching's...I had so many great meals at this gem of a Memphis restaurant in college -- it's one of the many Memphis spots that I miss the most. My go-to has always been the honey hot tender combo. I'm not exactly sure what the sauce is comprised of, but I know it's delicious. And at the end of the day, that's all that matters. The breading is crispy and just crunchy enough...even when doused in sauce. The Hawaiian roll and ranch dressing served on the side both offer some cooking relief from the spicy sauce. The seasoned fries will leave some residue on your fingers, but the payoff is well worth it -- they're some of my favorite fries. I always recommend anyone visiting Memphis to try Ching's.
