Go in for the Aggie Special - a sausage wrap and a large soda for C H E A P. They also sell some fantastic beef jerky if you're looking for something chewy. Texas Monthly called their beef jerky something like, "transcendent." I'm inclined to agree. Some of the best beef jerky I've ever had. They sell beef, lamb, pork too. There are giant take home boxes where you can grab several pounds of meat at once for a big party or a tailgate. The prices are all so low. So obviously, all the meats are coming from the classes that they're teaching in the meat and food sciences building that this place is attached to. Those spare ribs might have been some student's midterm project. The meat is all displayed (shrink wrapped) in big glass cases. Prices are clearly displayed. Buy in bulk and save! Everything is clearly labeled with the Texas A&M logo so nobody gets confused about where you got your meat. They have helpful posters that inform the purchaser about where different cuts come from on the animal. The staff was super friendly and helpful. They offer a microwave in the corner if you need to warm up something and take it to go. My favorite is the sausage that's shaped into a football. Gig 'em! If you're on campus, you gotta check this out. This store will convert the strictest of vegetarians into carnivores! Whoop!

What a shame this place hasn't been reviewed yet!…read more I've been taking my pigs here for processing for a year now, after a really unsettling experience at another local slaughterhouse. Smithville is such a breath of fresh air! Cliff the manager, and Joe on the kill floor, are always so courteous and make me feel like they really value me as a customer, and more importantly I feel like my hogs are in good hands when I drop them off. I had once instance of bloodspotting on my meat, and before I could even notice it, Joe ran out to my truck when I was loading up and let me know about it, and how the hog just wouldn't calm down that day. I cannot begin to describe how much it means to me when an issue like this is brought up immediately and honestly. They always do a great job being patient and understanding what cuts I need for my customers. The answer is always "yes" if I ask "can I get my meat cut this way?" And trust me, I really push the envelop with this one, haha. If there's every a problem, I know I can bring it up to them and they will do what they can to address it. Cliff is also excellent at explaining regulations, which can be daunting for people getting into the meat business. He will also help you to set up a private label. As far as butchering goes - when I get a kill and chill, their splits are pretty good and consistent. Their sausage is good - and simple. And they are inspected, so you can get your meat cut for retail and they do a good job making it look presentable. They deserve your business.
