Carolina's version leans into a vinegar-pepper flavor that's typical of Eastern NC barbecue. I arrived just before the lunch rush so I was able to get a table near the door where I could enjoy my lunch while watching the queue grow a bit. The chicken was moist and flavorful, still very hot from the fryer. Hot enough that I had to start with a knife and fork to tear it up before I could dig in. My sides were okay. The potato salad was a mush. Pleasant flavor but no texture that leaned into mashed territory. The mac and cheese was good but overdone noodles and no "tang" from the cheese.
