Ding's Special Cold Plate: Excellent. This signature appetizer platter was one of the restaurant's best. It included five items: dried tofu, seaweed, pig ear, beef tripe, and spicy beef shank. Fried Pork Chop + Green Mustard Fried Rice + Spiced Eggs: A must-order. The fried rice had great "wok hei" (breath of the wok). The fried pork chop, which had a bit of fat, was crispy on the outside and tender on the inside. The juiciness and the texture of the melted fat were perfectly handled without being greasy.
